I can’t wait to try this with shallots, currently I made a mistake when I ordered my groceries and duplicated the bag of onions to two 3 pound bags instead of one, and there are only three of us in my household, I was looking for creative ways to use the onions so we don’t have to eat them every day in the ordinary usage. This will really help, I will make some for my household, and my daughters so she can have them in her refrigerator too. By the way, I am envious of your knife skills, I’m not nearly as coordinated or proficient with knife handling!

So wonderful to see recipes that don't use oil! People don't seem to realize it isn't just the most caloric additive, but skews the heathy ratio of essential omega fatty acids unfavorably. and contributes greatly to inflammation in the body, which is behind many disease processes. Read the labels... oil has no nutrition to offer. It is the waste product left behind when all the nutrients and fiber are processed out.. and contributes nothing to health. Don't be fooled by the industries that promote them! get your essential fatty acids from whole complete foods like nuts, avocados, olives, etc. Thank you!
