LMMFAO!!! I had the same thought. But u can make them with the grated cheese in the "green" can. Chef John is the best but not everyone has $12 a pound parmegiano reggiano laying around lol But the white bread? ummmm NO lol

CHef John, this recipe is a staple in our household. My husband makes them. I had been making fried croutons in small batches. Now we make THIS recipe and keep them for days. We eat them like chips; we use the crumbs in hamburger meat and other recipes; my hubby makes them the day before Thanksgiving dinner and includes them in the stuffing instead of using old bread or crumbs. It makes the most amazing meal. Thank you for this. I share this video with anyone who asks!

These were pretty amazing. I deviated a little from the recipe, I added more garlic to the oil because....GARLIC and let it sit overnight! I put the spices in the olive oil mixture freehand and adjusted to my preference before coating the croutons. They came out super tasty! I made a bunch of these and put them in (pretty) sealed bags to add to my homemade holiday gifts to friends and family. Make sure the bag is not paper as that will absorb the oils and really dry out the croutons, not in a good way. I also made crostinis using the same method. BTW, don't throw out the oil infused garlic, yummy on sourdough, or it can be added to homemade salad dressing, or even a marinade. Thanks Chef John!

Currently making this out of the stale leftovers of my home made potato bread, following the directions to a T, man its crazy how garlicy that oil tastes and smells even when put through a sieve. Def going to look into infusing more oils. I'm sure my croutons will turn out great, you have never done me wrong. I love that carnitas pork roast recipe, so easy!

People are really sleepin' on this recipe. I've made this at least once month since I first searched "homemade croutons" about 1 year ago. I love making and having these around for a week or two in my kitchen. 90% of the time, they don't even make it into a salad. They have more than anything become a quick, crispy satisfying snack. Although they barely make it into any salads, I _would_ say that my purchasing and consumption of potato & tortilla chips snacks have gone _down_ by about 80/90% since I've started making these croutons. I have actually in my life just bought bags of croutons at the grocery store, knowing that they probably weren't ever going to make it into a salad. I felt super guilty about this because of the price, the quality and how quickly I knew I would eat them. But, no more guilt for me with THIS recipe. These always just seem to last anywhere from 1 to 2 weeks for me and are _soooooo_ much more satisfying than any store-bought crouton I've ever had. I wake up on a day off and I'm hungry and have to run a few errands? I pop a few croutons. I come home from work and I'm famished? I pop a few croutons and get on with the next thing. They're even tasty with a bit of peanut butter and a piece of fruit and/or cheese!!! I've even put them in a just-made soup, like ramen or cream of mushroom, and in just-made pasta or rice. Super DELICIOUS and adds a great touch!! Chef's kiss 😘 and THANK YOU, Chef John!! P.S. Marinating the minced, chopped or smashed garlic cloves (however you do it) in the Olive Oil for hours or overnight _REALLY_ makes these croutons special. Don't skip doing that. 👍🤗

Just made these, very delicious. I went with garlic powder and chives with olive oil though though, didn't have time to let the oil and garlic sit, although I do have a bowl of garlic and olive oil sitting around for future use now! Thanks for the tips!!

I used a two day old half banquette. Used olive oil with garlic paste and used all the other ingredients listed. I didn't have hours for olive oil and garlic to marinate. But man on man, they are delicious. I am eating them Right now with homemade pea soup. Yum😋

I love this simple recipe. In our house it's got to the point where we wait with glee for the next batch of old bread rolls and baguettes so that I can make some more croutons. The trouble is that the family tends to "steal" the finished product as snacks in the place of crisps before I ever get to use them as croutons in soups etc. What the heck. Thank you.
