I know it's not very traditional, but the onigiri filling that has become a family favorite is to use dried, shredded pork (aka pork floss, often sold as "pork sung" or "pork fu"), then add just enough lite soy sauce to remoisten the meat (but not so much that it drips if you gently squeeze). I even have people from work asking me to make extra for them.

Perfect! The filling should be anything you like! When you have big filling, you can always make onigirazu instead 😃 Mr JOC loves pork floss too!

Onigiri was the first thing I ate when I went to Japan. After I got settled in my Hotel, I went to 7-11 and bought one. Such a wonderful experience and so exciting for me. 🇯🇵❤️

One thing i have always wondered is, when you cook rice in the rice cooker, do you use it immediately after its done for onigiri or do you have to let it cool and if so for how long? Because in recipes it is usualy referred to warm rice so i am always unsure when to use the rice. I have been unsuccessful in the past with onigiris falling apart. Thanks in advance!

I can say that we never make onigiri with cold or room temp rice. We love making it with hot rice that our hands can handle. I sometimes have to toss rice between hands because it's still too hot. And often times, my hands do get red... why I'm using hot rice? Maybe because I feel onigiri with hot rice tastes better, and I've seen my mom and many women make onigiri with hot rice... :) Oh the onigiri tastes really good, too right after you made it.... So I'd say, use warm to the hottest rice your hands can handle.

How should we store the onigiri after making it? it always gets so hard in the refrigerator and then when I heat it up in the microwave, the filling gets heated up as well. For some feeling, that is OK, but others probably not so good such as the tuna, mayo or the bonito flakes.

To keep them moist, I recommend covering them in a damp cloth or using plastic wrap.

That's the way it is with any cooked rice. Warm them up in the microwave for a minute or so. But onigiri is best eaten in the day basically.
