Spongy and airy Earl Grey Chiffon Cake, made with Earl Grey tea and perfect for a snack or dessert.

Ingredients:
2 tsp. (3 g) Earl Grey loose tea leaves
1 Tbsp. (5 g) Earl Grey loose tea leaves
6 Tbsp. (90 ml) hot water
3 large eggs
85 g (3 oz, or ½ cup and take away 1 Tbsp.) sugar, separated
3 Tbsp. (40 ml) vegetable oil
75 g (2.6 oz., or about ⅔ cup) cake flour (See Note for homemade cake flour recipe)
1 tsp. (3 g) baking powder
Equipment you will need
1 17-cm (about 7”) chiffon cake pan (Do not grease the pan. Chiffon cakes cling to the sides to rise. If you grease the pan, they will not rise as high.)

All-Purpose Flour vs. Cake Flour:
All-purpose flour and cake flour do not perform the same. Cake flour is more delicate, and if you use all-purpose flour instead of cake flour, the texture will be dense and tough. If you can't find cake flour, use this substitution:
Take one level cup of all-purpose flour, remove 2 Tbsp, and then add 2 Tbsp of corn starch back in. (1 cup AP flour - 2 Tbsp AP flour + 2 Tbsp corn starch = 1 cup cake flour). Be sure to sift the flour 3-4 times to distribute the corn starch well.
Tips for beating egg whites:
-- Make sure your beaters and mixing bowl are clean and dry. A speck of oil or egg yolk on either one can minimize the volume of the beaten egg whites.
-- Avoid plastic bowls -- even clean ones may hold oily residue that can affect the beating quality of the egg whites.
-- Use a bowl that's wide enough to keep the beaters from being buried in the egg whites.
-- Do not overbeat or underbeat egg whites -- your cake may fall. Egg whites should be stiff but not dry.

i made it , in my oven i need to bake it for another 5 mins in the future , my mom's said it still a little bit underbaked. but overall it still taste good, not too sweet. soft , jingly , light , nice kick of earlgrey

omg I just made it and its amazing! I had to make the stiff peaks by whisking by hand which was super hard but it was worth it for this cake. I like this video because its easy to follow and not boring. thank you!

Oh, how I love this cake. Many years ago we used to live next to a Japanese bakery in Boston that introduced us to it. We are not cake people, but loved the earl gray cake so much it became THE birthday cake for everyone in our family. Then the Japanese baker moved back to Japan and the shop closed. We were heart broken. I am pretty good at reverse engineering anything in the cooking realm, but the baking world is a different story. Luckily, this cake didn't give me too much trouble since chiffon cakes are so easily adoptable to different flavors. I love your idea of grinding up the tea leaves. I usually put them in whole (leftovers from brewing the tea), but they would probably be better distributed ground. I usually ice mine with tea infused stabilized whipped cream. Thank you so much for making more people aware of this wonderful cake :)

+Namiko Chen (Just One Cookbook) It is popular in Korea too. :-) When I was in high school, my favorite dessert was chocolate chiffon cake with vanilla whipped cream. So yummy! You will love Korea, hope you have a chance to visit there sometime soon! I've never been in Japan either, but would love to go there and live for a few years! hahaha

Great recipe and really good looking cake, quick question though, I see you didn't butter- flour the baking pan, why? normally I do that with my sponge cakes, or the ones that stick really badly, your looked like it did stick a bit. Just wanted to know if there's a specific reason for that:) Thanks in advance

It says in the description box that cakes made in this kind of pan need to cling to the sides of the pan. Therefore, if you grease the sides, the cake won't rise as high. Hope this helped :)

***** I love this recipe. I made this chiffon with a little twist. I replace the Earl Grey with the Jardin Bleu (Blue Garden) because I don't have any at home, but it's still amazing. I love the smell of the cake when it was in the oven. I couldn't hold back. It would be perfect to enjoy this Chiffon with a cup of green tea or with milk. hi .. I really loved your idea of tea in cake.. I have seen various combinations of lavender, matcha, peach cakes. And in india we do not get those ingredients. Even if we get them it will be too pricy. Could you try cakes with flavours available in Asia?

Hallo from Indonesia I have a question, since 17cm pan is not popular in our country, can I ask question; in your website we can change to 2x 3x, what is the size of the pan should I use? I did a vanilla version based on this recipe by swapping out the water & tea with milk & 1/2 tbsp vanilla extract which works perfectly. Hope this helps !

+Jessica Mulia Its important to use chiffon cake mold or angel food cake mold so you can make it upside down to cool after baking. Also don't use non stick. Batter needs to cling to cake pan to rise higher.

You can! In Japan we don't usually use cream of tartar, and use cold egg whites to beat (instead of room temp egg whites - unlike how American recipes use).

You made a typo in your video...it should be 170C not 107C ! Big difference. Pls correct.

Hi!! I tried this recipe! And its in the oven as im typing this.. it has massive cracks ! Its not smooth like yours! What could be the reasons?

It could be one or few of the reasons. 1) heat is too strong (check if your oven temp is exactly same as what the oven says. It's good to measure your oven temp using a thermometer). 2) didn't incorporate the meringue properly. 3) didn't beat egg whites properly and didn't have good air bubbles.
