I think everyone who has to go on the gluten free diet misses cinnamon rolls at one point or another. I had tried to make them several times and they never turned out right. All the recipes that I found had you use a muffin tin and that just wasn't the same. I wanted real rolled up cinnamon rolls, where you could see that beautiful swirl. This recipe has everything that I wanted and more. They are so good but I have to warn you that they are not my easiest recipe. If you haven't worked a lot with gluten free dough, be warned that it is very sticky and can break easily. This video is crucial because it shows you how to successfully roll up the dough. Be patient with the dough and go slow. Don't rush the rolling up process or it will not work for you.
Now, I use plastic wrap on the bottom because you actually want the dough to stick to it. Parchment paper on the bottom would work as well I just like plastic wrap a bit better. You want the plastic wrap because it helps to manipulate the dough. If you tried without it, it would just fall apart and be a complete mess.
You can also make these the night before. Just get to the part where the rolls are in the pie plate, cover them and put them in the fridge overnight. Take them out and let rest on the counter for 25 minutes before baking.

I made these rolls today. I suggest to anyone making them, to thoroughly spray or oil your piece of parchment paper. I had a major mess because the dough stuck firmly to the parchment. I ended up having to scrape the sticky dough off the paper. There was no way to get it to let go of the parchment except with my sharp knife. I just make balls of the dough and filling, putting the balls into the baking pan and letting them rise. Since it was just for my family, it didn't matter that they looked like a mess. They still tasted good. If I make this recipe again, I certainly will take steps to alleviate this problem. I went back and watched the video again and saw that the recipe author had no trouble peeling the parchment off her dough. I wish it had worked so well for me. Thank you for the recipe.

Gloria Billings - Thanks for the fore warning concerning this recipe & keeping dough from sticking to parchment paper. Never baked Gluten Free Cinnamon Rolls/Buns before. Sorry you had a mishap, but glad that you did & that you shared your testimony. It helps the next person, also makes us aware of always oiling/spraying your parchment paper/ wax paper/foil & bowl that you are using to proof the Dough of all types Gluten Free/regular. Great recipe! Thank you. I added 1 tsp of Xantham Gum to the flour, I found it made them hold better and adds to the overall finished texture. Thank you for sharing. 🥰

Love it. I do love yeast and milk and this is the first gluten-free recipe using both.

Mine turned out delicious and didn’t stick to the pan. (I buttered under the parchment paper.) The dough was quite sticky so it wasn’t easy to cut and place into the pan so they were a bit wonky looking. (I used the floss method to cut them.)Thank you so much for sharing this recipe!

I made this recipe today and was satisfied. I suggest you refrigerate the dough after you roll it, to firm it up before you cut into it. I didn't do that and it was messy but the taste was great!

So I followed the receipt but came out a little dry, any way to make them moist..I did not put the icing on them

Turned into more of a cinnamon roll cobbler lol. Rolling this thing up was almost impossible, I have no idea how to made it work. My 6 year old has recently developed a intolerance. So I really want to make her feel as if she doesn’t have to miss out of the goodies every one else in the house gets to eat. But I think it will take a lot of practice

cmmrris1 I’m so sorry that it didn’t work for you! It is probably my hardest recipe. Gluten free dough is super sticky and hard to work with. It has taken me years to understand how to work with the texture. My advice is to go slow when rolling it up and take your time making sure that each part of the dough is rolling. You really need to use the plastic wrap because it gives it the support is needs to get a good roll. Don’t give up, gluten free baking takes practice but it is so worth it!

Not sure this is helpful, but flouring everything, including the parchment (which should be used in place of plastic wrap). The general idea is to cover every surface, without mixing the flour in because that is gross. So a pit of stickiness surrounded by dryness kind of evens out. At the very least, you might get closer and be able to tweak it easier. The properties of gluten free flour vary greatly by location and weather patterns. In the meantime, Glutino sandwich cookies are better than Oreos, Schar bread to keep sane, and Heartland pasta to be normal on the cheap (the rest of the fam won’t even know the difference.

My dough was really sticky 😂 but tried using more flour and butter to help with the sticking. But they del apart pretty easy 😢

Have you tried it with almond milk? I don't keep cows milk in the house but I have everything else.

Me and my BF are lactose and gluten intolerant so I can tell you that they do work with almond milk they even come out a little less dry. Coconut milk also works but it makes the batter even more sticky and generally a nightmare..

You made cinnamon rolls the RAISED- can you can you make a coffee cake that requires dough to Rise and be Rolled into the size of a pizza pan (three layers)- my wife is trying to make a annual coffee cake gluten free now for her 15 yr grandson recently diagnosed with Celtic

It has to rest and the yeast becomes activated. It will get foamy. It takes about 5 min

I followed the recipe and my dough was so sticky I couldn’t use it. It went in the trash!! Too bad, I was really looking forward to cinnamon rolls.

Pam Hunter yes, it is a very sticky dough and can be hard to work with. It is almost the consistency of thick cake batter. Sometimes keeping your hands wet or spraying your hands with non stick spray can help worth handling the dough. Unfortunately, gluten free dough is just like that and we try to find ways to work with it. Gluten free bread dough is the same consistency as well and even after working with it for years it is still frustrating sometimes. This is definitely my hardest recipe!
