How to Make Homemade Bacon

How to cure, smoke, and cook homemade bacon. It's much easier than you'd think; it just requires a couple of special ingredients and the right equipment.
Jalapeño Garlic Bacon
3 lb. pork belly with skin attached
40 grams kosher salt (about 5 tbsp Diamond Crystal, about 3 tbsp Morton)
1 ½ tsp pink salt (Prague Powder # 1, Insta-Cure, DQ Curing Salt, etc.)
40 grams maple sugar (or 40 g/3 tbsp brown sugar)
5 cloves garlic*
4 mashed jalapeños*
*optional flavors (Unfortunately, most savory ingredients don't really add much flavor. Try using sweeter additives, like 1/2 cup applesauce or 3 tablespoons maple syrup.)
1. Combine ingredients in a gallon-size zipper bag. Refrigerate for one week, flipping every other day.
2. Rinse pork belly and place on a rack in the refrigerator for 12 - 24 hours.
3. Smoke with apple wood at 200 degrees until the bacon has reached an internal temperature of 150 degrees.
4. Cool at room temperature for a couple of hours, but remove skin 10 - 15 minutes after removing from smoker.
5. Chill thoroughly in the refrigerator. Trim sides, ends, and top before slicing as desired.

this is one of the few ACTUALLY good videos on youtube. it is a prime example of youtube videos can strive to be - informative, amusing, creative, unique. it is most surprising because this man has nothing more than a camera that records a quality of 480p max and an editing software. i believe aspiring or big youtubers should take notes. There aren't many of these golden videos on this site

You, sir, are a huge nerd with a Darth Vader spatula and a desire to be Alton Brown. I'm glad that I'm not the only one who exists. Great video, and I'll be baconing my pork belly this weekend. Yes, I made a verb out of the word bacon.

The salt kills the bacteria. The old adage of rubbing salt in the wound came from the fact that salt prevents and halts early stage infections in wounds. The wounds were probably from battle,as this practice is age old, Nitrites, keep the fat from turning yellow. I'll take the yellow fat,thank you very much.Having grown up living the old traditional way of Appalachia, I've been curing and smoking hams and bacon for almost 40 years now and have read everything I could find on curing mixes. Just pure salt and pepper followed by some cool hickory smoke and you'll be good to go. This is a good video to get you started. Good job.

Everyone carried a hopps nitrate for rifles and pistol use and as a nitrate it's a wound cleaner from hell if there ever was one. They used it along with salt and sometimes without salt to clean wounds. And with salt for curing. But these methods did not exist until just before and during the civil war. Now in west and south texas, and the lower dryer states they used only sakt for curing meats. And many times on our farm my grandmother never refridgerated her bacons. She wrapped them in butcher paper covered in lard and salt and hung in a dry place in the house or barn in a cotton or burlap sack. They did this with both hams and bacons and only smiked them after 30 to 45 days for hams and about 14 days for bacon. And the spices were always sage, black pepper and salt. Never seen anyine use sugar ever. Using sugar is what causes food born bacteria and probably why after the 1980's had gained wide use. But its not bacon. Bacon was only eaten with maple syrup and toast where many have adhered to sugar curing only recently as in the 60's onward.

Finally, I must say I wasn’t planning on leaving so many separate comments but then again I wasn’t expecting to find so many enjoyable moments in a homemade bacon video. Really excellent tutorial. I've been home curing and smoking for about a ear, but was looking for the jalapeno bacon recipe. Entertaining and informative. It would have been great to have last year as means of avoiding some of the mistakes from experimentation. Thanks.

@psient I'm glad you found some useful information. As far as the thickness goes, I recently had a slab that was, at most, only one inch thick. I used my recently-acquired meat slicer to cut the slab at a 45 degree angle, which made the slices wide enough to resemble normal bacon. If you're doing the slicing by hand it might be difficult to cut slices off at an angle, but it's certainly possible with a good slicing knife and a steady hand.

Thanks for all the info. HOWEVER, the BEST way to cook bacon is on the bbq grill. A buddy and I were reroofing a house one day and the guy next door was grilling some store bought bacon. We had to get down off the roof and ask him what the hell he was cooking, because the smell was driving us crazy. Cook it over medium fire and watch it to make sure you don't burn it. But the flavor and texture is amazing and well worth the extra effort. IMHO

I make my own bacon too. I use the basic cure from the charcuterie book plus peppers from my garden and black pepper. I also add agave syrup to bump up the sweetness. For smoke I use wine barrel staves.

It's a great book. Obviously I like the bacon recipe/method, but I think my favorite recipe in there is the breakfast sausage. It's incredibly easy to make, and it tastes way better than any other breakfast sausage recipe I've tried.
