It's time to find out what are hot dogs made of! No, not the cheap ones, these are the real ones. Today, we're going to take venison trimmings and turn them into a traditional summertime favorite - hot dogs!

By the end of this video, you're going to turn out a delicious, tasty hot dog at home, right in your own kitchen. We'll be using venison and pork fat in this video to make our hot dogs! You are free to use venison that's already been ground and frozen (thaw it first, obviously), you just may not know the fat content compared to using meat that's not been ground.
We are using a 80% lean to 20% pork fat mix for our hot dogs. In our video today, we are using 24 lbs of venison.
We are seasoning our hot dogs with our own Bearded Butcher Blend seasoning bit.ly/3o9BqS7 at a 6 oz/12 lb meat ratio.
We also add 2 oz minced garlic and 2 oz hickory smoke per 12 lb meat.
With 28mm cellulose casing, 8 hots dogs makes up 1 lb.

When making hot dogs, you don't want the ground meat to have any definition like sausage whatsoever. The ground meat should be very finely ground by the end of 4 or 5 passes through the grinder. Remember, the colder the meat is, the more efficiently it will pass through the grinder.

5:21 - Start by seasoning the meat. 12 lb gets 6 oz of Bearded Butcher Blend seasoning. We mix the seasoning into the trimmings before we grind them so we end up with a much better blend.
7:59 - Scott show you how to take apart, assemble, clean, and lubricate the meat grinder.
10:00 - Time to grind up some venison! Start with a 10mm or 3/8 inch plate for a coarse grind.
12:17 - Grind #2 goes through a 4.5mm or 1 inch plate. Never remove the guards from your meat grinder!
14:06 - Grind #3. Replicating the outcome of a bowl chopper (finer meat texture) by running the venison through the grinder again.
16:23 - Grind #4.
16:31 - Grind #5. Change your gloves (lots of protein extraction by now, everything is stick and the proteins are binding together). At this point, dump in 1.25 lb ice for 12 lbs of meat. Dump it right into the ground meat. This will bring the temp down and help it through the final grind.
21:54 - Now it's time to get out the mixer! MEAT makes it super simple by allowing for a quick attachment of the grinder to the mixer that you just finished using. Just dump in your ground meat and 1/2 ounce pink cure (sodium nitrite for wild game) for every 12 lb meat. Use about 1/2 bottle of water as well. Change directions every minute, 8 minutes total - so about 4 minutes mixing in each direction. You are free to add more water if you notice that the meat is firming up. Lean meat like venison will usually absorb more water.
25:28 - No more power tools. Time to stuff the meat into the casings on the manual stuffer.
28:31 - How to twist hot dogs. Try to keep up! 😮
32:25 - Time to smoke the hot dogs on the Traeger 885. 165 degrees for 2 hours, then 1 hour at 185 degrees, then 1 more hour at 205 degrees. 4 hours total... Then a hot dog ice bath!

You guys bless me so much. Two brothers who love each other and stay close even after marriage and children. You guys are best friends. When we were growing up my brother died in an accident., I was there with him when it happened. He was 11 and I was 14. I am 58 now. I often watch you guys and wonder if he had lived how much better our lives would have been. And you all work together. God Bless. You guys are a blessing to watch. I have to say how much I enjoy these vids and much it helps me as my brother was killed in a car accident when he was 23 and i was 26. He was my best friend from the start and i was always his protector even after we were grown. I miss him so much and know we will be together again. You're right. Their tutorials are also very informative, thorough and family friendly. I like watching on the family room TV even when the kids are around. Try watching other butchers and count the cuss words and sexual innuendos. These guys are simply the best. Makes me wish I had a brother. Also wish I lived close to their shop. Cheers everyone.

These guys make me proud to be from Ohio!! My grandfather had a large farm in the Amish territory and between learning from the Amish and then learning the farm life from Grandpa, I was given all the knowledge I needed to never be hungry but always have delicious food as well. You guys remind me of me and my brother cause we were always doing something like what you guys do but after high school I went the military route and he went college so we unfortunately went separate directions and it never really hit me or bothered me till I hit 50 and then one night I realized how much I had screwed up!! Each day I miss him and wish he and I could do stuff like this together again. My health isn’t doing good now and I don’t feel like I’m gonna be around too many more years and I sure regret those lost years!! Guys, don’t make my mistakes with your brothers. I’d do anything to have a relationship with mine like these guys do but now it’s too late and it hurts like hell!! Take care guys, be safe out there!!

Hey Sean, Seth, and Scott! Love your videos! As a youth, my grandfather retired from B&W and bought a small grocery store on the outskirts of my hometown, Lynchburg, VA. Therein, he operated a modest meatcutting operation that was the main draw. As soon as I turned 15 and 6 months, I acquired my workers permit and began working with him on Saturdays. He trained me to fully process beef hind quarters as well as pork, chicken, and deer. I think my main job was to breakdown and clean the saw, tenderized, grinder, and other equipment. My grandfather, however, quickly turned over the operations to me alone on Saturdays and, eventually, Sundays. During each Christmas season, a huge operation was launched to cook, debone, and slice country hams. In Virginia, both when entertaining and for the family, country ham biscuits are a holiday staple. In this video, I noticed one stark difference in how grandpa set up his shop. The meat grinder was inside of our walk-in cooler. "Brrrr!" was the word when it came time to grind. Like you, however, he also did the double grind: once through the course die and then thought the fine die. Your videos bring back so many memories for me. Keep on keeping on.

A trick I read somewhere, rather than running bread or having ungrounded meat in the worm, I just run some of the already ground meat through, so you don't have any unground meat left. This works best for the final grind.

My great grandfathers shop just recently stopped making the skinned hotdogs. I don’t know why but now we can only get skinless. I liked the snap of the skin. The present owner didn’t give me a reason. The other dogs are great anyway. When I was little they took me back and showed me how they stuffed the hotdogs. It was a big machine that’s for sure. You guys are bringing back memories.

I used to work for a "wurstmaker" in Troy, NY. Hembolds. It wouldn't be surprising if you have heard of them. Kurt Widmer was the proprietor and he ran an excellent shop. I was a kid... delivering his product to the local stores and markets. I didn't realize it at the time (17 years old) ... but it was one of the best jobs I'd ever had. I got to witness hot dogs being made. You're process is different... almost "sausage" like, but you did add heat to the process. The curing process for commerical a bit different in that they have "steam/smoke" room where it cures at low temps and they use a lamb casing which will allow the smoke and moisture to permiate during the process. You're method is definitely the best i've seen so far for the "home chef". Well done Sir's. I can tell you have a very proud family heritage and future generations will benefit from it.

Greetings Bearded Butcher’s and fans, I attempted the creation of the hot dog not realizing I had hog casings that were kind of large and made what I think are the best kielbasas on the planet Bearded Butcher style. They’ve been smoking now for well over and hour and they are fantastic smelling and looking. I did a video of my adventure and it is not a quick easy process but it takes cautious timing. I’ve got a few more hours and wowza it’s happening so thank you as I’ve enjoyed every minute

If you were to use some dry ice during your icing procedure, you would get the double benefit of faster cooling and disinfection from the carbolic acid produced.

WOW......WOW......WOW!!! Great Video Guys!!!! I been watching for a few months now and this is my first comment... WOW!!! I'm 52 years old and have learned many Butchering Tricks from watching you 2! I've always wanted to be able to make homemade Deer Hot Dogs, but always had the meat not ground enough..... Now I see a few ways I went about it all wrong! GREAT VIDEO!!! Thank you! As soon as I can, I'll be after a Speed Beefer here in Pennsylvania to make into hot dogs, Sausage, bologna and Steaks!

Love watching and learning how to make these great Venison products! Just recently tried Venison summer sausage and it turned out GREAT! I normally just make Venison jerky but am expanding to new and delicious foods. Keep up the good work and great content. BTW, dogs on the pit with the family was such a great thing to do. I love to do the same with our family!

I use smoke permiable easy peel plastic casings for my sausage... They Peel great and allow smoke to get into the meat.

You guys are professionals, I have attempted hotdogs and sausages , so so with elk . I have cut up and processed many elk and one moose a few deer and antelope , wish too have seen this 48 years ago . Great job!

A well done video for processing wildgame hotdogs, enjoyed the bow n arrow portion also. Cool bows , goldtips are glorius ,I like using the nugent signature arrows. Try taking the stuff off the bows and shoot instinctively also.

Fantastic video! You guys kept me sane watching your videos during the pandemic. I especially enjoy the brotherhood and family values. I told you I would even watch you guys if you did hot dogs...you are just the greatest. I will not be making hot dogs, but I will be be grilling some this weekend with lots of Bearded Butcher Blend Seasoning and BBQ sauce. Most enjoyable 52 minutes 24 seconds I have had in awhile.
