INGREDIENTS for 470gr Protein Icecream:
400ml milk
65g whey protein
4-7drops of intense sweetener
2 tsp vanilla flavour
1/2tsp Xanthan gum
INSTRUCTIONS:
In a deep bowl, pour 400ml of milk. In a separate bowl, combine 65g of whey protein powder with 1/2tsp of xanthan gum. Whisk them together thoroughly.
Add 2 teaspoons of vanilla extract and 3 drops of liquid intense sweetener to the milk. Mix well.
Gradually whisk the protein powder mixture into the milk until smooth and well combined. Be sure not to add xanthan gum directly to liquid ingredients to avoid clumping.
Whisk the mixture vigorously until it forms a thick and stretchy foam.
Place the bowl in the freezer for 30 minutes, then remove and whisk again to break down ice crystals. Repeat this process 3-4 times for a smoother texture.
After achieving the desired consistency, transfer a portion of the ice cream into a separate bowl.
For the strawberry swirl, blend 100g of strawberries until smooth, then gently fold it into the ice cream using a spatula.
Return the ice cream to the freezer and let it set for 2-3 hours, or until firm.
Serve and enjoy your homemade protein ice cream with a boost of 35g of protein and around 200 calories per 200g serving!
