I used to wash dishes in my Uncle's restaurant and I always used hot water, after a while I got so used to the hot water that my hands could actually withstand near 90°C hot water. Since these guys have been making Mozzarella for 20+ years, they're probably used to the water being boiling hot.

I think it all comes down to the possession of their unique identity. Some may find it offensive when another race/ethnicity decides to possess that uniqueness because they felt like they have lost their unique identity. What makes a Italian cheesemaker great if everyone can do it? So, it is essentially dilution of culture. Some may also be offended if another race doesn't do it as good/disrespect their culture. Like..adding pineapple on pizza. Haha, I'm just kidding. But you get what I mean. I think the best way is to share your culture and not be selfish about this unique identity your ethnicity shares, but more important be respectful to one another's culture.
