Pan de Muertos is a traditional Mexican bread served on Día de Los Muertos. It is a sweetened bread flavoured with anise and orange. This bread has great significance in Mexican culture. The day of the dead is a holiday where people welcome back the souls of their deceased loved ones.
Each part of the uniquely shaped bread symbolizes something. The round body of the loaf represents the circle of life and death. The ball on the top of the loaf represents the skull of the deceased. And the segmented pieces laid across the loaf represent bones and tears. Flavoured with anise and orange it has a unique taste. It is enriched with sugar, eggs, and butter. A Mexican brioche of sorts. It is also cold fermented.

This is definitely going on my baking to do list. My dad was born in Colima, Mexico and would often tell us stories about Mexican tradition & culture while he was growing up. He passed away yesterday morning at 101 years old. I will make a batch in his honor when I get back home. Thank you for sharing this recipe. 💞

You mentioned it looked like a turtle and it reminded me of "tortugas." They're made with pan fino which is basically a soft, sweeter, tighter crumb dough with a light cinnamon flavor and with a sugar cookie on top that Mexican bakers call "pasta" (paste).

Oh man I just kept telling myself, it will come together just keep going. All of a sudden a dough ball formed out of the mess. I had to use some orange extract because I couldn’t find orange oil or orange water

Excellent ! My mom used to finish the surface with egg wash and then sesame seeds ,then bake them, the flavor is much more complex than with simple sugar. And I think is much better. But thanks maestro for this recipe.

@@ChainBaker I just made it. The taste is interesting in a good way and it's quite fluffy. I do like how the flavor changes in the mouth but nothing is overwhelming. Just the hot chocolate seems like madness to me. I used ca. 1/3rd o the chocolate and it barely dissolved and 1/6th of the sugar was sweet enough for me... Overall, thanks, I'll do it again.

Made the dough yesterday at lunch - final shaping, proofing and baking this morning. The aroma of orange and anise while baking - heavenly. Soft, sweet interior with the buttery, sugary exterior and the hot chocolate - what's not to love??? Photos have been posted on "Charlie's Baking Buddies".

Looks good ! If you have never tried it try to find some Mexican chocolate for your hot chocolate it's quite different and very good. I've had these breads many times along with most of the other Mexican sweet breads and they are all good.

Finally, a recipe I actually made before Charlie made a video on it! Dia de los Muertos & Pan de Muerto are probably my favorite parts of Mexican culture, and some of the few things from my country that I'm unarguably proud of. Glad you got great results as well, and I'm really happy you liked it! Maybe in January you can try making Rosca de Reyes as well? It's a sweetened bagel (but like, family sized) topped with fig or dulce de membrillo, that we eat to celebrate the 3 Wise Men on January 6th. There's always a baby Jesus baked into the rosca (though I've also seen people use cherries, as to not risk your teeth), and whoever gets it in their slice has to pay / make the tamales for the next family gathering. It's delicious and so much fun!

This is the first time I made "pan de muertos" myself. As is to be expected, Charlie's recipe is awesome. But instead of orange zest, I used orange blossom water that I found at my local Middle Eastern ethnic store, and Fiori di Sicilia that ordered from King Arthur Flour. It's amazing how fragrant these ingredients are. The aroma from the crumb is wonderful. I strongly recommend getting hold of these ingredients if you have the option.

Spot on! Try two doughs next time, same ingredients and percentages except for the second dough which will be used for the bones decorations. If you use less hydration on this “second dough”, the shape will hold better and they don’t puff up that much, leaving an almost cookie texture on these. Hope you try it. By the way, your channel is the only bread channel I follow probably for the past two years now or maybe even more. Thanks for all the good stuff. Also, and this might just be in my mind, I believe you’re struggling for new recipes. Why don’t you try some Mexican sweet breads? We have a lot of french influence but with interesting tweaks. Garibaldi sweet bread is one of my all time favorites (hint hint)

Hey Charlie, I don't know where you get all your wonderful ideas from but you hit the nail on the head this time for sure! I have some Hispanic friends that I would like to make this bread for. Can I use orange blossom water in lieu of the orange oil? If so, in what quantity? And how about using vanilla sugar for the glaze? As always thanks for all your great recipes and know-how. Dawn.

Thanks, Dawn :) I have never actually used it, so I'm not sure how strong it is. If it smells quite pungent, then I'd stick to the same amount as the orange oil.

I ended up using just a scant 1/2 T of it (the stuff is really strong!) and my little "turtles" came out perfect and delicious! Your instructions, as always, were spot on. Thanks for giving the final proofing time and temp that you used it really helped a lot. That's the one area that I still am slightly unsure of when it comes to my bread baking but it's getting easier to tell each time when I have such great examples to follow! Keep doing what you do so well. Looking forward to the next one... Dawn.

Great video but question... How many servings is one loaf typically? I can see slicing it into thirds or even in half. I've never seen this bread so I'm really not sure!

Interesting that the Spanish and Japanese word for bread 'pan' is the same. Which came first? Japanese or Spanish version?

Good job Charlie, although it looks like you lost some of the definition of the huesos (bones). Was it because the breads were small? By the way you should look for Ibarra Mexican chocolate. Don't listen to any Mexican that says get Nestle Abuelita. That is made with palm oil and other weird stuff. Ibarra is made with Chocolate, sugar, cinnamon, and soy lecithin as the emulsifier. It's not even originally from Mexico like Ibarra Chocolate in Mexico is lighter and frothier than American and European style.
