Hilah! Thank you for sharing this delicious recipe. In 1981, when I worked the cold station at an upscale seafood restaurant in Palo Alto California, we had this on the dessert menu. I've served this over the years, often at banquet and catering events. Blessings ChefMike

What an awesome video! At 1:23 I noticed my mouth was hanging wide open and I was almost drooling! That looks so delicious! Gonna have to try that recipe, thank you for creating that video!

I have a phobia of fuzzy peach skin, so this recipe delighted me when I noticed you took off the peach skin. I can detect peach skin texture, even when people cut it up into a cobbler. Also, I really loved the colors in this video. I know it is a French theme, but it sort of feels retro 1950's/early 60's as well. Nice video.

Chef Escoffier created the peach melba in honour of Dame Nellie Melba, the famous Australian opera singer!

you will actually find that the chef created this dish for a woman who's last name was melba and that woman was Australian. so therefore this dish is a very common AUSSIE dish

Yep... That's how she as a cook was able to spread it. If it was a cooked dish, the typhoid would have been killed by the heat, but she handled the cold peaches endangering the lives of the wealthy families she cooked for.

I peel peaches a lot (the boiling water method) but yesterday I did it with some peaches that were starting to get squishy but didnt seem to actually be ripe yet and the skin would NOT come off after multiple tries. Could it be because the peaches were of bad quality? I've never had this happen before, this was kind of rambly not sure if I worded things properly.

Looks delicious! But I have to say I had trouble watching this video. I've been a fan of yours for a couple years now and I love your instructions-as-you-go video format. I'm not feeling the video-with-commentary style. We miss out on awesome Hilah content that we all love.

Marissa Karto I got it on Amazon, it's Simax Glassware. So far it's worked well! The handles get really hot, but the lid doesn't.
