Sally I will always say yes to rum also. I love that you created the rum syrup along with adding a little bit inside the almond cream. Great tip I’m putting the sugar on top to get a nice golden brown color super delicious now I’m craving one of these

Chef Sally! you made one of my favorite breakfast treats that I have with coffee! I go to this French bakery in Key West in the morning and get one of these. Do you use the day old cause it’s stale and will soak up the moisture from the pastry cream? They look delicious! I live learning from you. Oh is that pup a Brittney? Cute ending! 👍 one

Yes, day old is best! I have a fantastic bakery close by that is on my dog walking route where I pick up my croissants from. My doggo is a Nova Scotia Duck Tolling retriever (try saying that 10 times fast!). Cheers!

Can you leave out the rum without substituting something else? I would like to make this without alcohol.

Absolutely! I recommend increasing the water to replace the rum so the syrup isn't too thick. You can add a bit of almond extract to flavour is syrup too if you like.
