I totally flopped this because I couldn't get the measurements right. Maybe I need a better scale but mine just couldn’t go to as low as 1.8gram and seemed inconsistent with everything else. Does anyone have this in ml or cups

Hello, and thank you for making this video. We have a small chocolate company, bean to bar, which began nine years ago. In the process above, to what temperature do you cook the sugar solution? What is the water, sugar, and invert sugar ratio? Finally, since chocolate melts easily, do you cool the solution to room temperature, or would that harden the solution before you added it? Yes, as mentioned almond cream is meant to be baked after as there's raw egg in the mixture. You can bake it in a tart shell with berries or pears. It's great in croissants and baked to make almond croissants. I have a video for that too!

Can you use normal sugar
