Full length video on how to make my favourite Greek cake: Portokalopita. Made by shredding filo pastry into tiny pieces, they are layered up with an orange yoghurt custard and baked. Drenched in a cool sugar syrup, the texture isn't disimlar to a lemon drizzle cake. Just a million times more delicious. Ingredients:
- 2 oranges
- 500g filo pastry
- 400g caster sugar
- 1 stick of cinnamon
- 200ml olive oil, plus extra for greasing
- 250g Greek yoghurt
- 5 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla bean paste
