Like having your own grandma teach you how to cook stuff. This is how it would look in a restaurant too so it looks right. =3 These go good with sauce too. I also eat these with Goya Hot Sauce. That sauce is really versatile and goes well with most puerto rican dishes. =3

Yauita in English is what Jamaicans and some west Indian people call coco / Taro root and there are some variations of them. If my memory serves me right the word Yautia is the native name for the root given by the indigenous Indians who were the inhabitants of Puerto Rico the Caribbean/west indies and the rest of the Americas. Thank you for sharing your recipe, I grew up eating these.

Yautia-Taro root. Back in the day My mom used to make all those things. She made a living selling them. She taught me that if you put guineos verdes and plátanos verdes in very hot tap water for a little while, they are easier to peel. It works. Also when she was going to make things with yuca, she scored it like a platano and then peeled it the same way. Much easier than using a potato peeler. Love you videos. Keep them coming. Gracias

Hey @Sweets and Beyond, in order to make pealing plantains easier I usually run them through hot water for a few minutes, then when you make the first slit you can just peel the whole plantain in a few clean swipes its awesome because when I make mangu it makes the whole process much easier. I hope that this tip helps bc it is certainly a life saver for me bc lord knows i hated peeling platanos w a passion haha.

That's interesting, in Haiti we call Yautia "Malanga"! We have another root vegetable that we call taro "tayo". As far as I know, malanga is the African name for yautia, some caribbean countries call it malanga & some yautia. I'm sure there are other names floating around.......

I love love love love this recipe Ida! Thank you for sharing! And about the yautía, I see in the comments that some people think it is taro root, but even though both root vegetables are very similar, they are not the same thing. What is commonly known as taro root in English is mainly what Puerto Ricans call "malanga". However, I don't think the alcapurrias would taste extremely different if one is used instead of the other.

Thank you for your informative video. I love these, and just got back from the island 2 weeks ago to visit my cousins. I had some in Pinones. Now I'm going to give you a little tip that works for me when I peel those bananas. I put them in hot, hot water for about 1/2 hour. If the water gets cold I put in more hot water. After a while, the peel comes off much easier. The banana does not cook in the hot water--it just gets warm. Now to get the ingredients because I am making those today. They make them with yucca too!

Aida, you give great step-by-step instruction and great tips for preparing the root vegetables and alcapurrias. Tip: A great way to remove the dark staining of Plantains & Green Bananas is to Lightly Rub Your Hands with Salt & a bit of Comet Cleanser, then rinse. Works like a charm. The plastic glove trick is also great, but gloves tend to tear or get holes in them. They're also hard to handle things with when they're wet. Thanks so much for the recipe/instructions! :D

Lol, I used to hate removing green banana skins for that...black nails for days! Then my mum said to me to rub some oil on my hands before doing it and it helps but gloves are better.

To avoid stains on your hand you can also rub some oil over your hands when handling the green bananas and lose the gloves...Nothing better than a real 'hands on' approach

This was the very first thing I had to eat after I landed in Puerto Rico on the way to my aunt/uncle's house Man on the side of the road was selling them; they were so good!!! I've never forgotten that taste. Now I can give this a go and make them for myself.
