Making sherry at home is slightly different to making a normal wine as you needd to break some wine making rules!
Here, I go into the basic method for making a sweet sherry wine using tinned apricots.

I prefer a sweet sherry. People often criticise me as though my preference for sweet sherry makes my palate less sophisticated. I don’t understand why. I love your video and it has inspired me to try making my own sherry.

I have been inspired by your advice to try something new. I call it RYCE. It is a rye and rice wine. It is only about 3 months old. I used about 800g of sugar on two gallons and an all purpose wine yeast, so it is more powerful than I expected. Green it was drinkable, but again, strong. Keep up the fine work. Greetings from STL.

I was looking for a video on how to make sherry and found your channel. I did some reading about sherry first and found that it is oxidized. I have experience making home brews and the idea of making sherry in a "wrong" way sounds different and fun. Thank you and I have subscribed. Cheers!

Made moonshine. Starting small, obv. 2L cloudy apple juice from the LIDL shop. Crossmyloof yeast. Regular granulated sugar. Spooned in a little liquid caramel after 3 days. A pinch of cinnamon in each bottle. Drank it all in the end. Was.. surprised when I _really_ liked it! Gonna get a big fermentation bucket for when the weather gets warmer and try more now I know it's possible to get drinkable wine!

Love the tip about adding a clove to the airlock to keep away fruit flies during the summer. Thank you for that one. But here's a question. If the idea when making sherry is to allow exposure of the wine to air then why are we to seal the fermenter with a lid and an empty airlock? Would it not be easier to simply use a bucket (very large surface area) that we cover with a dishtowel or muslin cheesecloth (could be secured with a large elastic band)? Is that too much exposure to oxygen? Thoughts? Thanks

I was si happy to find this video but wondering where to get the yeast. Not familiar .plus the bottle..hmm can I use any other bottle?love from Malaysia

Hi James, I'm doing this recipe and have got it in the secondary fermenter now. Only when I siphoned it I didn't do it so cleanly and there is a layer of peach bits floating at the top of the demijohn. Is this OK? Or will they spoil the wine and should I rack to a new demijohn? Any help would be appreciated :) Danny

What do you know, I accidentally made a carrot sherry. It tastes fantastic. Very fruity 😊. About 6 months ago I started bottling my 16 month old wine. Then I had a series of unfortunate events which led to me leaving a demijohn half full of dry carrot wine and half full of oxygen filled air. 6 months later I have finally gotten around to bottling it, and it's now a sherry:) I was a little worried it would be vinegar.

Interesting video - have not seen anything like it before. Why would you want oxidisation with sherry? I have not looked into the issue of oxidisation before.

I know with home brew beer kits that you can do a vigorous stirring to get oxygen in at the start, but maybe only then.

Why not just wrap the cloth/bandage/etc around the top of the demijohn, instead of using an airlock that doesn't use water?

when you add the sugar, you say you will add a further 400g later on in the process, however at the point of adding the sugar, you say add the 200g of sugar? I'm at this point. Which is it please.

@@avisswain1263 Hi ,no reply i'm afraid, I like sweet so I just put 400g. its still very cloudy but it is still fermenting. I have it at the side of a radiator, so it gets hot and cold? i'm will be 6 months in May lets see what happens. in the mean time, We are enjoying our white grape wine from the garden. cheers.

Shame he does not allow for a print out of his recipes, i have quite a few but i do get fed up having to sit at the computer every time i want to watch the video.

I am working on getting the written side of the recipes written up. Juggling work and family I find the days dissapear too fast. It's a flaw and something I am trying to improve :)
