Southwest Egg rolls! Let me show you how to make a easy Southwest Eggrolls. Your family and friends will love this easy delicious appetizer dish. This dish is easy to make and full of flavor. It’s the perfect appetizer. This recipe is full of flavor, and super affordable under $20.

INGREDIENTS ---- (All can be found in your local grocery)
20 Eggroll wrappers
1 15ounce can of black beans (Rinsed and drained)
1 cup corn (frozen, canned or fresh)
1 Green Bell Pepper, diced
1 Red Bell Pepper, diced
¼ cup green onion, diced
½ pound boneless skinless chicken breast, diced
1tbls Chili Powder
1tbls Cumin
1 teaspoon Garlic Powder
½ teaspoon of salt
½ teaspoon of ground black pepper
½ fresh shredded Parmesan cheese
1cup Cheddar Cheese or Mexican Blend cheese
1 big tomato, freshly diced
Oil (for frying eggrolls)
Sweet Chili Sauce, for dipping ( or any sauce you prefer)
Directions
Season chicken with chili powder, cumin, garlic powder, salt and pepper mix well. Add 2 tablespoons of oil to pan on medium high then add the diced chicken breast. Cook diced chicken 4-5mins until fully cooked. Remove from heat and add chicken to a bowl along with black beans, diced red and green peppers, corn, green onion. Taste and add additional season if needed. Add cheese and mix well. Open egg roll wrappers on clean plate place a damp paper towel over them to prevent them from drying out. Grab one eggroll wrapper place on clean cutting board with one corner of the eggroll wrapper pointing towards you. Place 2-3 tablespoons of the southwest filling on the eggroll wrapper. Take the wrapper end that is pointing towards you and fold it over the filling mixture. Fold in the sides of the wrapper, and then continue rolling the wrapper tightly all the way to the end. (See instructions on the back of egg roll packaging) You can also use your finger to brush the ends of the wrapper with a little bit of water to help it stick together. Repeat with the remaining wrappers. Add about 3cups of oil to a pan on medium high. Once oil is hot or reaches about 350 place 3 - 4 eggrolls in pan depending on the size of the pan and cook them while rotating often until lightly golden toasted on all sides. Drain on paper towel and seve warm with your favorite dipping sauce.
Baking Options:
Preheat oven to 425 and line eggrolls on seam side down to prevent from opening while baking. Brush with oil or spray with nonstick cooking spray bake 10 -15 minutes or until eggrolls are golden. They wont be as crispy as the fried ones but they will still be delicious.
