Most videos say filtered or boiled water doesn’t make a difference. They clearly didn’t do the testing! Thank you. I just ordered those ice moulds from your bar tools video as I’m way too lazy to do the cooler thing

I find 36 hours in my freezer give me the thickness I want. I cut the ice with my oscillating saw, with a blade I only use for ice. To finish off the cubes, I heat up a frying pan and using tongs I can square off and polish the sides.

I actually found that if you allow it to freeze all the way through, you get LESS clear ice, since you always end up with that stripy structure you can see at 1:38. It is really tricky to time it just right, but if you do, you get a larger block of clear ice; plus, it's a lot less work to cut it out. And also, you can put in the next batch sooner. If I had to guess, I'd say when the last parts of water freeze, it does so in columns, moving the water and the the bubbles around, and melting tiny spots in already frozen clear ice; then bubbles and impurities sorta climb up those spots. Don't know if it's correct of possible or even makes sence :)

Vidéo très intéressant et informatif! Je suis curieuse maintenant à savoir si de l’eau bouillie et filtrée donnerait un meilleur résultat. Si oui, est-ce que bouillie d’abord et ensuite filtrée est mieux que filtrée d’abord et ensuite bouillie ? Et par la suite je continuerais avec : deux filtrations plutôt qu’une ? une avant ébullition et une autre après ébullition ? Et c’est là que je m’arrêterais, deux ébullitions seraient de trop, car le goût changerait trop. Si j’avais le matériel pour le faire je le ferai :’(

Haven't seen the use of a torch on ice before - does that help to get cleaner edges? I've been using a heavy duty baking sheet to try and flatten each side but a torch seems quicker

In that case I used it to get rid of the little ripples left behind from the serrated knife. But you can also use a torch to accelerate the tempering process before cutting the big block

@@TrufflesOnTheRocks So I’m not sure if I botched it but out of a 6 inch high block I had to scrap about 1.75” worth; the rest (~4.25”) was clear.

Hey, I have a question! I just bought a small Coleman cooler and my first batch of hopefully clear ice is freezing away. When it is frozen solid and I take it out; should I then temper it, and if so how long? I have a three-pronged icepick and I'd love for the block to crack as beautifully as it does in your video. Have anyone tried vacuum boxes? In past there were boxes that had little pump to make vacuum inside. In theory it should suck the air from water during freezing.

Does anyone else get lines in their ice? I can cut along the lines, but if I go against the lines, it shatters. This only happens occasionally and to my knowledge I'm not changing anything in my technique

I just keep it in the freezer in a Ziploc bag. It will start to get freezer burnt, but it lasts a while. It will stay clear as long as you keep it though. Also, if you spray your cut ice with vodka, it will stop them from freezing together as much :)

And medium/low temp in a freezer equals what temperature? :) My freezer is at -15 Celsius

I didn’t have a thermometer for that. What I would say is, let’s say your freezer has gradations, put it at about 1/3 of the gradation. Does it make sense?

What’s the coldest you freezer goes? If it’s -14 for example, I’d say medium low of that would be around -6 or -5

I get your point but my logic tells me that because the clear ice is more dense, chances are a 2x2 clear cube will take more time to melt completely than a cloudy one. That said, there’s probably also more water in a clear 2x2....

Cloudy ice is cloudy because of the tiny air bubbles trapped between water molecules, so water molecules are not compacted. In clear ice there is no air bubbles. Which means water molecules are more compacted and it’s more difficult to separate them so the ice can maintain its low temperature longer. From the physics perspective: ice cubes are held together by covalent bonds between water molecules. These are not strong bonds and energy (here room temperature) is enough to spread the molecules apart. In a cloudy ice, air bubbles are already disrupting those covalent bonds, so it takes even less energy for the water molecules to be spread, hence cloudy ice melts faster. Hope this helps !
