INGREDIENTS
Sweet potato cake :
2 cups plain flour
1 cup cornmeal
1 tsp baking powder
1 tbsp cinnamon
1/4 tbsp nutmeg
1 tsp salt
2 medium purple sweet potatoes
2 cups coconut milk
2 cups brown sugar
1 cup chopped pecans
1 tbsp lemon juice
2 tbsp white rum
Cake custard:
1 cup coconut milk
2 tbsp melted butter

I must try this very simplest version vs the Jamaican version ! I must say thou I alway preferred raisins in my Ja sweet potato pudding! Also the type of sweet potato matters 😤 and is pricy vs the local sweet potato here in US! Btw … where is the merry merry on top 😂

This is a good recipe but the recipe in the description is missing maple syrup, butter and vanilla. Also, this recipe yields a larger cake than in the video. I had to bake for over 2 hours which is in line with most sweet potato recipes. Otherwise, very simple and tastes just like the one I get from the Jamaican bakery.
