Just sat there, thinking "He's gonna do it... Definitely gonna do it... Here it comes..." Either it didn't occur to him to do it, or it did, but he didn't want to equally freak out Kent, the professional that might try to help out in a way that would turn it into an actual emergency; better to be safe than sorry. On the other hand... (No pun intended), maybe it was too predictable in Murphy's head to pull the ground-up fingers prank.

Yeah the burgers weren't cooked properly. The method is fine but they need a bit higher temp and/or more time. Beef tallow has a smoke point of 400F and they were flying close at 375F, but putting the cold meat in is going to drop the temp dramatically. You should be getting much closer to that smoke point, ideally have the burger ready and put it in right when the tallow starts smoking. And for the love of god, don't put two burgers in there, it exacerbates the issue, then you're cooking with cold fat - things aren't going to get crispy. I'm also not a big fan of flat pressing a fried burger - the nooks and crannies of gently forming a patty gives much more room for crispiness, the downside being that it's going to fall apart more easily.

I like this guys mentality of Burgers are a personal opinion and make them how you want I personally like it when a "teacher" doesn't just say if you don't do it like this it will be awful. He knows the burger he's making is great for HIM but understands that others may not for example Brain not liking pickles or the sauce and he says that's fine. I like this guy, get him here more often

I've watched this video SO many times at this point, probably around 15-20 times. I watch it every time I make burgers and they always turn out AMAZING. I love the MR and I love Kent appearing in their videos, I'd love for him to be in more videos.

23:13 Does the sodium citrate melt or dissolve the cheese? No. No, it doesn't. It is an emulsifier, which will act to keep the oil from separating from the rest of the cheese, by binding itself to both. It is the heat that melts the cheese. And american cheese is essentially real cheese that you add emulsifier to. As opposed to “cheese product” which can contain many extra things. So he's basically making his own american cheese. I got curious about what american cheese is, one day, and looked it up.

To prevent your patties from falling apart, a nice knead with hands after grinding would do the job. When you plan to grind your meat for yourself, it is a good idea to cut the meat into slices and deep freeze the stripes before grinding for 20-30 min.

Also, the beef pattys are falling apart because they didnt mix the beef that much. If you grind your own then you should mix the meat together a little because it helps the protein molecules form a... some kinda compound that i cant remember. But it helps the patty stay together a bit better. But we careful, you can over mix it very easily.

Hey Brian, I used to think I didn't like pickles either - but it turned out I just didn't like dill (it tastes like a facefull of deodorant to me - and it's in just about *every f***ing* commercially available pickle) - so I started making my own pickles. You should try to figure out if it's pickles you don't like, or just one of the spices used.

Ideal burger: 70/30 grass fed Angus (finished in espresso butter), sauteed portabellos, jalapenos grilled in beef fat, beer candied bacon, caramelized vidalia or Hawaiian onions, on a buttered potato or sourdough pretzel bun and either drunken goat cheese, blue cheese, pepper jack, or homemade IPA cheese sauce

26:55 What happens when you do not change the fat you are frying in : More and more of the triglycerides break down to form polarized compounds, giving the fat, the food, your kitchen and you that distinct smell of old, rancid fat. Its also rather unhealthy to cook your food in acetone etc - so no, that would not be like a specific yeast culture for cheese or bread but more like the yeast forming on sewage. High TPM = BAD. Salt in your paddy will draw out too much moisture as you've increased the surface area of the meat through the grind. The result is a rubbery texture. It wasn't that the tallow wasn't hot enough - it was just not enough fat compared to the paddies to stay at the right temperature. If you overheat the fat it degrades faster and the meat might come out rare then you want it to with thicker paddies. Unless you have a large frying vat, I'ld go with one paddie at a time. To caramelize onions - you'ld have to prepare them just after you've melted your cheese. Caramelized onions are slowly cooked off in a bit of oil until they are soft and super sweet. In that tallow, you'ld get crisp brown bits~which I would put on a hotdog or chicken sandwich, but not a burger.

The yellow orange color in chedder cheese is from pasture grass fed. The color of the cheese would vary depending on the cows diet. The coloring was added for product consistency.

I loved watching Murphy grinding the meat. I think the best part about this show is that you guys are a blank slate before becoming a Modern Rogue. You really are a pair of clueless buffoons.I mean that in a nice way, its ridiculous the world we live in that people have become so very specialized. You each have things you're great at but being able to improve yourselves by learning all these things is amazing. The effort you put in and the knowledge you incorporate into your lives is great.
