I came here to say this same thing. I really want to make authentic Mexican restaurant style chips and it appears that using the Masa created tortillas is how it's done. Nothing against using per-packaged corn tortillas, but I want to have more control over the taste and crisp. I'll be making some of these soon.

Great stuff. I'm from California and this is spot on. Only difference for me is that I use lard as the frying oil, as it's traditional and I think it still gives the best results for home use. This is because you can store and reuse your deep frying lard for chips or french fries at least 8-10 times, while seed oils generally go rancid a lot faster.

UGH THANK YOU!! i want to make nachos and EVERY "tutorial" uses store bought tortillas! I was starting to think you couldn't make it with homemade tortillas! I make tortillas all the time so I just needed a proper video on how to fry/bake em!

Oh, hallelujah and thank goodness! Yep, here's another "finally without the tortillas" comment. Okay, so "cut a tortilla into pieces and salt it" is a recipe to some people, more power to you and it takes all sorts, but I'm in the (possibly about to be institutionalized, who knows) _getting all sorts of kicks out of nixtamalizing the maize_ clan, and if I end up buying industrially made tortillas, then I could just as well go bought the industrially made tortilla chips. Thanks so much for the lovely recipe and video! It needs about 20 000 more likes.

I air fry mine. Little coconut oil or olive oil, 8-10 minutes. Yum.

They look (and sound!!) so delicious! I would have to put garlic and onion powder on mine. Or perhaps make them sweet by adding cinnamon and sugar, would they grind up the same? I could use powdered sugar, maybe.

They look scrum Steve, I use an old electric coffee grinder just for spices, it makes a really fine powder. I'm going to experiment with different flavours. Thanks for sharing Steve. Take care. ❤☺🐶

Good job! I suggest as soon as you pull the chips off out of the frying oil that you shake the excess oil off for 10 - 15 seconds, pour them into a perforated grid (I use a convection oven specialty pan that allows air from to flow) and then immediately season them for more adherence while they still have a little oil on them. Just saying... Thank you for your video.

I second Nice Me, there are videos on making corn tortillas and videos on cutting and frying (or baking, boo) tortillas to make chips but this took some finding. My tortillas did not puff up like this and like other recipes I've seen. How high is the heat on that pan? Maybe because I wasn't pressing them down. I left them on the pan a lot longer at pretty high heat and they still didn't puff up. Great tip on the water leaving the chip in the oil, you gotta get to that stage before they are crisp, I did not and got rubbery instead.

Hi Steve, have you tried seasoning the chips soon after they come out of the fryer? Maybe they'll stick a bit more as the oil evaporates?

It will but it will also clump. That is why a fine seasoning just works better.

Steve's Kitchen you have to make salsa verde (green sauce) pour it over your tortilla chips while it is still hot and then add some cheese and sour cream. Have and excellent day Steve!

Hi Steve thank you for the recipe. The last time I tried to convert homemade tortillas to chips, the tortillas were too thick. After frying them into chips, they lacked consistent crunch and were closer to a really thin fried bread. Any suggestions on how to get the tortilla thin enough? I believe in my last attempt I ended up using a ratio of 50/50 water and masa, and may have only pressed down on the tortilla press once, not rotating the tortilla like you did. Could that be my issue?

This is great, thanks. I wonder if anybody can help me. I have been trying to make my own tortillas to make tostadas and tortiilla chips from mostly so I can control what type of fat they are fried in. Mine always come out pretty thick and hard (for chips, I dry over night them then give them a quick oil fry). I suppose that is good for a tostadas but as far as chips I would like something less firm and dense and thick, any ideas? is it a moisture content thing with the dough? thanks again

Hi Steve, could you tell me when you're making fresh tortillas at what heat setting do you use? I don't mean frying them, I meant by when your actually cooking them in the pan. TIA

I prefer to use a cast iron pan, it wants to be hot so that water sizzles when it's splashed on the surface. You're effectively searing the bread.

Hey this so weird I was just thinking about tortilla chips and my t v play this video so like Few days ago Me and my family were running out of money and usually I'll get my 4 dollars chips but my mom was digging her in bag for Changes barely had enough for dinner and she was trying to buy me chips , but I was like "there was salsa off brand one and it's for sale and we have tortilla I can just fry them up" I said to my mom. Yeah my mom told my dad and they were like "aww your so pitifully" but like I really wanted salsa and tortilla chips!!! So tomorrow I'm going to make some when it's payday! So they don't think I'm trying to be pitifully. Lol 🙄this will help me. I love your videos!! I been watching you for like 4 years now! I'm from U.S Washington.!

Great job on this video. I really enjoyed it. I figure you have Doritos in Australia, so I will say that they are VERY expensive here in the US, especially for how cheaply they can be made. ...And, I'll be making my own chips from masa soon, and I bet, flavored like shown in the video, homemade flavored tortilla chips are much better than Doritos. I wonder if you could mix cotija cheese in your flavoring mix? If that's possible, I bet it would be really tasty.

Frustrated! I've tried so many times to get my tortillas to CRUNCH but they're always soft in the middle despite frying them. Do I need to leave them out to get stale more maybe? I've always sent them straight from the comal to the oil fry. Should I wait a bit? They're always toooo moist! Thanks so much in advance!

The store-bought tortillas are loaded with PRESERVATIVES. That's the main reason not to use them.
