Disclaimer: I'm definitely not claiming this is anything like the real thing at all :P On a nonstick pan, place a flour tortilla and some finely shredded cabbage on top, then thinly sliced onion and shredded ham. Place a sunny side up fried egg on top of it and top with kewpie mayo and oyster sauce :P

That is great because my understanding is this recipe was created after WWII when food was scarce. It's an easy way to stretch out cabbage and flour to a filling meal (they probably didn't include any meat/fish back then). So, that's very much in the spirit of the original recipe.

ɦɛʏɨȶֆʝɛֆֆƈǟȶ aka Jessica It’s kind of contextual... you can call something cooking on a bbq grill Yaki and you can call something cooking in a pan or on a flat iron Yaki as well. It’s mostly used for cooking methods that use pretty direct heat.

I first made okonomiyakis for my bf about a year ago bc I thought it’d be nice to get more variety in our stay-in dinner date meals. Totally backfired bc then it was like the only thing he wanted for dinner and they were kinda time consuming (I’d made crunchy tempura bits and extra toppings). Eventually I said we could keep having them if HE made them, so I took him with me to the Asian market, showed him where everything was, and taught him how to make them. Now it’s un-backfired bc I get to eat okonomiyakis 2+ times a month but someone else does all the work lol. He’s even come up with a keto version, and a “southerner style”.

I’ve been making this for a few years and it’s amazing. My wife lived in japan and asked me to learn how to make it and it is easily my favorite thing to make and eat. Worth the effort.

The okonomiyaki sauce here in this video is an American version. Traditional Japanese is a plum, dates and peach based sauce called Otafuku. The recipe varies a great deal from region to region. In Australia most places use Teriyaki sauce or a BBQ sauce. Of course choose the sauce you like best and don't forget the Kewpie mayo! :)

Not true: even Vikings have cabbage, onions and eggs and flour and dashi can be made with any fish and seaweed stuff like dried sardines etc. Japanese quisin can easily be adapted to local ingredients... F.e. mayo can be diy'd etc. 🙃

This is real authentic!! Even with the homemade okonomiyaki sauce, it seems pretty close to the real thing for me. I think there are some tiny differences, like how in my family we have a massive hot plate and while we're cooking the main pancake we'll fry the pork belly and shrimps on the side and pop them on right before we flip it. We'll also do whole shrimp rather than cutting it into small pieces, and we'll get squid too. Also pro tip: once you've turned the pancake over poke holes in it with chopsticks to get heat coming through more easily! But yea sick vid!

to add to the tempura scrap part, you can compromise by using either a poder tempura and making into a batter OR making your own regular batter with just flour(idk of itll be the same consistency) then you make little droplets onto a pot of hot oil, youre basically frying your own tempura scraps. As for making the little drops, using a fork should help, dip a fork into the batter then let bits of batter drip onto the hot oil.

If you have access to it, add grated Nagaimo/Yamaimo, Japanese long/mountain yam to the batter. The texture gets so much better due to the gooey structure of the yam 😍

I've made Okonomiyaki dozens of times and just tried your recipe. It was great. It was my first time making the sauce and I was impressed. I still added Yamaimo since my Osaka friends swear by it, but I might try a side by side comparison since I'm not convinced it's necessary. I substituted flour and soy sauce with Cassava flour and tamari for my Gluten Free friends. I don't know any GF substitutes for Worcestershire sauce.

As a Japanese, I was always confused why okonomiyaki gets referred to as a “pancake”. It’s nothing like a pancake to me and it feels similar to if someone was describing orange juice as “soup”.

Obviously you just have to fly to Japan, purchase the ingredients and fly back. Easy peasy. Or you might be able to find them on Amazon, I haven’t checked.

Don't be afraid, Karen. This dish is very casual (actually a street/festival food) and mix the batter, cook it like a pancake, and put the sauce and the Kewpie mayo on the top. You can omit or add some ingredients (meat, seafood, Chinese noodle, fried eggs, powdered green seaweed (Ao-nori) and so on) as you like.

In my home we call it "væltet køleskab", which I guess translates into 'tipped refrigerator' as if you had just tipped it over, and some stuff fell onto the pan and was cooked.

I like to cook my bacon or pork belly on one side, render out some fat, then cook the pancake in that pork fat. Crispy side gets laid down on the top before flipping, this ensures both sides get cooked and get the crispy texture I like. I also like to add mirin to the batter, I find it browns up a bit better. Just my preference, but give it a try some time.

Okonomiyaki flour helps. Wildly chopped cabbage can help too, helps with texture when cooked. Can sub dashi (if too strong a flavour) for chicken oxo (bullion cubes or any flavoured stock). Cube pork medallion steaks and toss through batter. Add corn it's awesome. Can sub pork belly for bacon or ham. Also for extra body use ground up daikon radish.

Josh, I'm writing to thank you. I had never heard of this before it was served up on my KZfaq feed. I live in the UK and spend time with the family in northern europe. My daughter is coeliac and a veg avoider. This can be twisted into a GF delight with 30% veg. With finely shredded cabbage, softened onions, kwispy bacon and bbq sauce it gets inhaled. And it's done from start to washing up in 30min.

The Agedama 揚げ玉 at 2:10 is also called Tenkasu 天かす by the way. I hope this helps anyone who wants to buy a bag. Also one of my favorite hole in the wall okonomiaki/yakisoba restaurants in Japan that I went to frequently when I lived there had imo-okonomiaki or potato okomoniaki. Instead of thinly sliced pork it had thin planks of potato on the top. The potatoes were always crispy on the top and fluffy on the inside. It was one of my favorite items on the menu.

Be carful if you are not a big fish eater with this one. I had to make two at the last minute, one with water and one with dashi, the dashi one was the only one with bonito on top. Made because my sis is allergic to tuna which i had forgotten. I much preferred the water one. I think it might have been down to the bonito flakes rather than the dashi but just beware. Think the flavour of fish pie thats been made with smoked fish, thats the level of fishness with bonito on top. Fairly easy recipe

yay! this is my favourite snack. they sell it at markets where i grew up and we share it w friends, they dont cut it we just go at it with forks. i eat from the middle bcus it's sauciest. if u can't find tempura scraps btw friends u can make it by mixing up some tempura batter and using a fork or something drip it into the hot oil !

Pretty much nailed it! Easy dish to make tho if you don't have a full-on Japanese market close by. Cabbage, egg, flour water - pancake, check! Add a bit of soy sauce (or salt), and ginger. A bit of sweetened Worcester will do it! The fish flakes are da-bomb-dot-com, but u can omit if u don't have. It's a very tasty dish, like the name says "as u like it" . Super tasty and very adaptable to what u have at home.

You don't even need to buy a lot of expensive or hard to find ingredients. You can make faux-Okonomiyaki-style omelette with common ingredients found in any grocery store and it's still pretty good. All you need is shredded cabbage (pre-made store bought works), your choice of seasonal sprouts such as alfafa or broccoli sprout or mung bean--what ever is on sale, eggs (around 3 large eggs), and any extra you want to add such as a meat of your choice, oil, soy sauce, and a sweet and sour type of sauce for the topping, for example, I have sun-dried tomato sauce that works well. Cook the meat, reserve, add the oil and cook the cabbage, then add the soy sauce, then sprouts, add back the meat, mix around then add the scrabbled eggs and do a quick mix and let it cook for a minute or two before flipping the omelette. Serve on a hot plate with your sauce of choice. Around $2-3 of ingredients per omelette!

I saw this video today and happened to have all the ingredients to make this, except the dashi broth (I used a tablespoon of fish sauce instead). And it was so tasty and super easy!!!!! I will be making more tomorrow.

you can actually find okonomiyaki restaurants almost anywhere in Japan where there are stores. The way that it works is that you get sat down at a table with a flat iron pan, and you can order pre-chopped fillings.

Watching this makes me thankful I was able to go to Okonomimura in Hiroshima and also Ajinoya in Osaka to experience both styles. Not easy to make at home but looked easy at the restaurants. For those wondering this video is Osaka style. I prefer Hiroshima style

I used to live in Japan, there was an Okonomiyaki restaurant right across the street from where I lived, and I'm here to tell you, it is AMAZING!!! Anyone who hasn't made/tried Okonomiyaki, What are you doing!? Go out and make it RIGHT NOW!!!

just found this channel and i like this guy's style. definitely gonna try his dashi recipe and to put together something resembling an Okonomiyaki when I get a chance to go out to the asian market again

One thing: traditional okonomiyaki used "aonori" literal translation: blue sea weed. And it's usually pulverised and sprinkled all over (with extra on the table for your pleasure). Anyway, love everything you do especially all the Japanese stuff (I'm half Japanese). Keep doing what you do best :)
