Hopia is a small pastry dough filled with different kind of filling and most popular is ube, mung beans and hopia baboy literally " non pork" (baboy is a filipino term for pork meat). it is said to be a chinese origins introduced by Fukien's immigrants in the Philippines.
ingredients:
ube filling: (can used ready made ube paste)
500 gms cooked grated ube
400 ml condensed milk
1/2 cup evaporated milk
1/3 cup all purpose cream
1 tbsp ube flavor
2 tbsp butter
procedure:
1.cook over medium heat, combine in a pan all ingredients except butter, continuously stirring until thicken and add butter or margarine. set aside and let it cool and form a medium size balls.
first dough:
1 1/4 cup all purpose flour
2 tbsp sugar
1/3 cup lard/ vegetable shortening
5 tbsp water
.mix flour and sugar and add the shortening until fully combine. gradually add water . dust with flour your working table and knead for 5 minutes. Wrap and chill for 30 minutes.
2nd dough:
1/2 cup all purpose flour
1/2 tsp salt
1/3 cup lard/ vegetable shortening
Mix flour and salt the add shortening flatten and form a rectangular shape about 8 inch long dust with flour cut in the center (the dough is easy to break so this is how i did or you can do many method you like) roll like a wheel and transfer to a flatten (first dough). kindly watch video for demo.
oven baked method:
first bake in a preheated oven for 170c for 15-20 minutes. the brush with eggwash and cook again for another 10 to 15 minutes until done.
no oven or kawali (pan){
cooked over medium heat place the hopia and cooked all side to lightly golden brown.
