What you need:
CREPE BATTER (approx 20 crepes 17cm)
2 cup all-purpose flour
6 large eggs
1 cup water
1 cup whole milk
2 tablespoon granulated sugar
1 teaspoon vanilla
1/2 teaspoon salt
3 tbsp melted unsalted butter
UBE PASTRY CREAM
250ml milk
55g egg yolk
50g granulated sugar
50g Ube Jam (Ube halaya)
20g cornstarch
1 tablespoon Ube extract
10g butter
100ml heavy cream for whipping
10g granulated sugar
Ube cake crumbs for decoration

Hello! I just tried your recipe but I believe there is a mistake with the measurement of the heavy cream because when I whipped mine it looked way less than yours did and my ube cream came out way darker. Could you please check the heavy cream amount? I would like to try again
