This is how you make wine from fruit. This video series concentrates on the making of wine directly from fresh picked fruit or frozen fruit. It is relatively simple once you know the equipment you need and the necessary ingredients and the process of turning fruit into wine. This is Part II of a 3 part series of making wine. (Racking)
It is a great hobby and if you like wine, you can not beat homemade wine that you have made. You can share with your friends or just keep it all to yourself. Once you get the equipment and ingredients you can make wine from .50 cents per bottle to 3.00 dollars per bottle which is cheap.

I run a micro commercial wine business. This guy I have a lot to thank for. I’ve tried others ways and techniques but every time I try this guys techniques things seem to work for me. I rack my wine 4 times at least and have brought a commercial level filter I would recommend it for the cleanest/ clearest wine possible Great video as always 🍷🍇

I'm sure in you case, this may not help... but, I've made a lot of spectacular beer. I always cold crash the carboy for 24+ hours then rack. Crystal clear after only 2 rackings. Cheers.

I made your wine using your recepi and it came out amazing. Just a thought, this is what I did, I skipped the entire racking procedure and just let my wine sit for about 4 months and then I used a clamp to adjust my hose to go just above the sediment by about 2 inches and bottled straight. It turned out fantastic. The last bottle got a little sediment in it which we drank right away on the spot.😀

Ive made cheese and cured my own meats for decades. Why haven't i ever made wine. I make jams, jelly, and syrups from my fruit trees and vines. But, now this man got me thinking i can make wine...lol.

I’m working on my 2nd batch ever! Mistakes were made during the first batch that have been corrected in the second. You absolutely can. It is quite the hobby. I have made jams, syrups, jelly etc too. It’s not much different. You just need the right equipment. Home Fermentation is legal. Selling it & Distillation requires a license.

When I rack my wine, I put the siphon on the bottom, then start it in a separate bottle to get the little sediment that is in it out of the main batch. I put my thumb over the hose after one second, then put it in the empty carboy - making sure to not let the siphon move at all on the bottom. At the end I put the remaining wine and sediments into a beaker to harvest what clears up in a few days.

If you are always using carboys to rack use an empty one and set your siphon down in till it is about an inch off the bottom (or however much you want it) then put a mark on the large siphon tube so you know.

You could probably use a medium size placid clamp to hold the siphon at a desired depth until you are ready to tilt the carboy.

Always make extra. A half gallon growler for large batches or a pint jar for small/gallon batches. If you need more than that, work on your racking game.

I once had orange wine many years ago. It was delicious. My friend Al’s father in law made it. He’s been deceased for many years, so of course, l can’t ask him fo the recipe. Is it possible you could give it a try? If you could, you would go to the head of the class! :) l can find fruit wine in the stores, but never orange wine. I wouldn’t imagine there are many people out there who make orange wine. So, you may be unique! In any event, a salute! You’ve done a great job! Thank you!

Just commented on a prior video on experimenting with a variety of fruits out in the orchard that we have once the orchard begins to mature. One of the fruits is seaberry. A type of citric fruit which may be tricky to work with only because of omega fatty acids that come with the fruit. We'll see. Love the nature sounds in the background. Shinrin yuko at its finest...

It is going to Taste like the best wine you ever had... we don't buy wine anymore because homemade is so much better. It's like store bought cake or homemade cake. Plus you control what you put in it. 🍷🍷

I sure hope your wine is as good as you say,I have 1 gal.blueberry,1 pineapple,and I just made a gal. of strawberry,,I just ordered a wrench for the lids on buckets on Amazon,$2.75,I found food grade buckets at Lowes,a 2gal is $4.48,lid 2.58,,,,,they have 5 gal.too around $10.00 with lid,much cheaper than Amazon

Awesome videos. I’m about to start my first batch of wine. After racking you add in additional wine and you mentioned water. Since I don’t have any homemade wine to top it off with i’ll add water. My question is: Is goin to dilute the alcohol content and flavor? Also if I did have wine to top it off with will that change the flavor profile from its purest form? Thanks.

Thanks so much. I can't wait to hear how turns out. Yes water will dilute a little but not enough to make a huge difference especially when making larger batches. Hey great vids ty. Question, I noticed your concern about headspace. As in additions to top it off. Is this only because of oxygenating worries?

Yes... but i am probably more worried about that more than others. Lol. Less you have the better but I've seen some wine makers not worry at all. Depends how long between rackings too. I wait 30 to 45 days. I know one Wine maker that lets it sit months between rackings. You would not want head space in that situation. Thanks for commenting. 👍👍😁😁

I have a three gallon peach wine and a 1 gallon banana wine that I have just racked into secondary carboys. I added just a touch of water to both to make up for fruit pulp. Is there a commercial brand of wine that you would recommend for topping of these wines at subsequent rackings? These are my 1st wines I have ever made so I do not have my own wine to top off with. Thanks again for watching us. That is a common problem topping off wine. Don't be afraid to use water in moderation if used my recipe. It accounts with extra fruit. A like wine is your best option. Peach wine for peach but won't find banana wine anywhere.. lol... love banana wine. For these just any white wine will do preferably dry wine. You can even add sanitized marbles for head space. Can't wait for you to taste your homemade wine. 😋

I am impressed about your method ! I do wonder how you would fit in medlars. They seem to be an exception to the other fruits. Hard, no juice in it, but they come inside (ripe) when they are Frozen. How would I do it with them? This year seams to be a year of exceptionnel yield…

You can, but you will still need to let fine particles settle. Cold crash will not speed that up in my opinion. Thanks for commenting and subbing👍👍😁😁🥂🥂

Make it so when you rack after fermentation you end up with a full 6.5 gallon carboy. When you rack off the Lees later, rack into a 6 gallon carboy. (No need to top off with different wine) I have the screw on lids for canning jars. I've drilled holes for grommets and airlock! So any extra wine that may not fit in a carboy goes into a smaller vessel to top off with later if needed. So I have pint, Quart, half gallon, gallon, 2 gallon, 2.5 gallon, 3,5,6,6.5 gallon vessels!

Great ideas. Kind of what i am doing to an extent. My primary fermenter i make 6 gallons. When i take all the pulp out usually will fill 5 gallon carboy perfectly. In the case of strawberry pomegranate, put juice in so less pulp. Great tips and suggestions for viewers and appreciate the great info and comments. Happy wine making...👍👍😁😁🍹🍹

I'm wondering about back sweetening since I like a sweet wine similar to a Moscato. How do I go about this since the carboy is filled just about to the top? There is no room to add anything.

I try and get close. But this recipe adds additional fruit so adding water in a 5 gallon batch is not going to change the taste. So adding water is just fine but you want to atleast get the wine up in the carboy neck some. 👍👍

Wine is always the best option on first batch... and water will work also... for a 5 gallon batch half gallon of water is fine.. this recipe accounts for that additional water. 👍👍

Good morning sir. Thanks again for the videos. My wine is bubbling about once every 1.5 minutes so I am getting ready to transfer it into a carboy in a day or two. Do I need to add any more Campden tablets prior to transferring it to the carboy or just transfer without doing anything else besides draining my bag of fruit and keeping as much sediment out as possible? I appreciate you letting me pick your brain.

So can I use canning jars to bottle this? Like if I wanted to have some carbonation (modeling after yellow tail moscato) (and commenting this at beginning of watching the video so you may answer it.) How do you recommend getting some carbonation into it? Can I use pint jars to 'bottle?' And can I can them as in heat in pressure canner to seal? PS thanks for the candid way you explain things.

Using canning jars will let oxygen into your wine and will make your wine spoil or possibly turn into vinegar. I would not suggest this. I would not heat your wine either. Thanks for watching👍👍

If you're going to carbonate wine, use repurposed, sanitized champagne bottles. They are designed for pressure.

So, starting out, what size was plastic bucket? Did you drill hole in lid, and if so how big? Or did you need to purchase all supplies from wine making business? Did carboys come with special lid and cork with hole in it to place airlock in, or did you need to drill hole in cork?

Lol.. I always have that problem. Rack to 6 gallon then clean and sanitize 5 gallon and rack back in there. I've had to rack to a bucket before in some of my videos and then back in because low in carbons. Great question. 👍👍😁😁🍷🍷

I'm following along your videos and I am really impressed with how you have things organized. I am in the middle of making two small (1 gal) batches from store bought fruit juice. Things are going well but I am definitely interested in your recipe for my next attempt. I really like the professional approach and yet drawn to the simplicity. But in this video I am puzzled by one aspect. I think I understand the importance of reducing the headspace after racking. But I guess I wonder why one would want to add wine to top off that space. Even though it's a small amount, it seems intuitively like you are changing what you have just made. Even if you add water, that's an alteration. Maybe it isn't noticeable .... but then again, how would you know since you don't have two jugs (one with the additional and one without). Is there another way to accomplish this? Could you have racked into say, two containers that would leave a small amount leftover that you could drink? I suppose where it makes sense to add additional wine is when you have the same kind of wine from a previous batch. But if not, it sounds like water is the way to go? Possibly it would make sense to look at the headspace and if it's just too much, rack into two smaller containers. You can tell that I'm new to this, but making sense of this is important and equally important is trying to understand the nuances, especially between various home brewers. Yes the best way to top off a carboy is with same wine preferably dry and that's number one option...i can do the because i have so much wine on hand but starting out you will not Have that. .. but don't hesitate to mix wines.. adding a banana wine to a new batch of strawberry will give you a cream flavor ths5t is amazing... 2nd option is water and you will see me do this Many times on this channel... one you may like is adding sanitized marbles to eliminate headspace. I'm on a budget so I have a question regarding the containers. Is there any reason not to re-use the bucket used in the first part for the racking? I'd have bought a bucket and a glass balloon like in this video and switched back and forth between them during the process. Thanks for the videos!

That is perfectly fine and have done many times.. rack to the bucket... clean the carboy or glass container and rack it back to the carboy. Will work just want to eliminate as much oxygen if possible. 👍👍

Some sources that I have read said that I need at least a 5.5 gallon bucket because of the bubbling during the process but that seems way overkill from the youtube videos that I've watched. I will do it more or less according to your video series with cherries from our tree. Greetings from Germany

@@HowToDoneRight Today I've racked the wine for secondary fermentation. I did make the mistake of moving the container it was in to another room, stirring up the yeast. Of course I did not wait for it to settle again and now a lot of it is in my carboy. Should I wait the full 30-45 days until I do another racking or would you do it earlier? Since my wine server did not have a pump I had to draw it manually and got to taste quite bit of wine before it worked, but at least I'm happy with how it tastes haha Thanks again for the videos

You can wait 30 days to get yeast out. You may just want to do an extra racking. Wait until you sweeten your wine. That brings out the fruit flavor. Your now a winemaker. 😁😁

Thats a common problem always. But if you used my recipe it compensates for that with all the extra fruit. In a 5 gallon batch you are ok to add up to half gallon of water. You can also add juice and your right I top off wine different flavors of wine too. Some people will even add sterilized marbles to compensate for that extra space. So if you don't have wine sitting around to top off the carboy I'm assuming you mix some more sugar with water? What would be the ratio and do you want to add it when it's cool? Thanks

I would not top off with sugar water. You could start fermentation again and that could be a problem. If its not much you can just use tap water. Alot of people just use water for top off but can make wine weaker. But if making 5 gallon batch it won't be enough to notice in most cases especially with this recipe since adding a good bit of fruit up front.

I believe topping off with 94 % grain alcohol will kill any robust yeast and fortify the wine. Displacing oxygen in headspace with Co2 is another option. Co2 gas from dry ice, small Co2 cartridges or regulated tank will displace oxygen even if headspace is extreme, (10 liters in a 20 liter carboy). I believe nitrogen gas would also work, but I haven't tried it yet.

Thanks for watching the channel. Tannin is added up front in primary fermentation. Hopefully i didn't miss that. But yes i add wine to just eliminate oxygen space. Alot people will add sanitize marbles too to eliminate headspace.

Have you ever saved back the yeast on the bottom? You could "wash" it with water several times, letting it settle between washes, until the red color is gone or mostly gone and then collect the yeast and refrigerate in small containers, then reuse.

@@HowToDoneRight I Before I retired I was a molecular biologist. We regularly stored frozen yeast or bacteria for long periods of time (a year on up to almost indefinitely) but we also used a lot of lab equipment. You could store refrigerated yeast from the mat on the bottom of your fermentation for a few weeks but properly frozen could last at least a year. For frozen you add 10% glycerol (NOT glycerin) final to your yeast slurry. You could safely freeze the cells for long term storage that way. Just thaw to room temp and use whenever needed. The glycerol is a sugar and safe for use with your fermenting. What it does is prevent ice crystals from forming and cutting up or damaging the cells. Good all the way down to -80 C or -112 F.

I have a tangerine tree in my yard that was thought to be useless full of seeds and not much of anything else so I picked them for two years and composted the fruit started pouring half sodas and anything a bee would like an now she puts out some good fruit I've picked them on the second of December washed and put them in the bucket peeled washed am In trouble not killing the the natural yeast after adding the fruit cause I put peeled apples few pineapple and my own yeast so far I'm still bubbling

You definitely want to get the wine up in the neck if possible... wether add water wine or juice oxygen is your enemy in secondary... number 2 you can put in what you want dollar wise. I got most of my equipment used yard sales craigslist... once you have the equipment that's all you need. Additives are fairly cheap... I get people to save me wine bottles to reuse.... great question.. it's a fun hobby and you can make wine fairly cheap once have equipment.

She may not have racked the wine enough. Some sediment in wine is typical and can happen. Bentonite will help with that.

Yes... you want to keep the least amount of oxygen at the top. Oxygen is your enemy in wine making. Kind of why carboys are tapered at the top.

@@HowToDoneRight hi...you may be interested in a product that wood workers use to push oxygen out of their wood working finish containers. It's called bloxygen. It's an aerosol of some sort. Don't know what gas is in the aerosol, but it's purpose it's to push the oxygen out without replacing with the aerosol gas. It sells, so at least it works to preserve wood finish from skinning over from exposure to oxygen. worth the research?

You can just use tap water. This recipe has extra fruit added so adding water will not hurt and will not diminish the taste unless you have to add alot of water. Yes all wine can be a dry wine like all these wines i make as long as your sugars are going in beginning process and you do not backsweeten your wine. More to come when you see video 3 . Hopefully coming here soon

Use vodka in the air lock. It won't go bad and if it gets in the wine it just adds alcohol no flavor. It won't add bad water.

Why do you want to top it off with extra bottle or two of wine? Can it be done without topping it off?

Yes you could top off with water if not much. Some people put in marbles to displace wine. Another idea is to top off with fruit juice. You just want to eliminate as much oxygen from carboy as possible.

Thanks for watching. It is not necessary to degas. When stirring bentonite that does some degassing. Just not necessary

@@HowToDoneRight I followed you recipe for homemade fruit wine and I just did my first racking last night with peach wine. I made peach a couple of years ago and I know from experience that it takes quite awhile to clear. With the 11 lbs. of sugar suggestion, my five gallon tested at 16%. Again, thank you..

Usually 50 cents to 2 dollars... if you have access to orchard and fruit practically nothing. Great question. 👍👍♥️♥️🍷🍷

Corks you need to buy obviously you cant reuse them.. but bottles are reusable or have people save them for you which I do alot. 👍👍

Champagne bottles that I collect from weddings or what ever, work for me. Use crown caps to seal.

Dear Todd, I don't see you adding Potassium metabisulfite and Potassium Sorbate after you done with primary fermentation for stabilizing, is it necessary to add or not before secondary fermentation. Thanks

Great question... I use campden tablets which Is the same thing... you only use them in primary before adding yeast and right before Bottling. 👍👍

Yes will be very dry... bitter not really... but backsweeten your wine is when you will get your fruit flavor back.

Keeping hose down in liquid prevents some. Can't eliminate oxygen totally. Buy got to do thre best you can.👍👍

You can add water if not too much. Also you can add sanitized marbles which will eliminate so of the head space.

Sure. Once you open it a simple syrup will sweeten it. Not going to be as good as if done before Bottling and aging like that though. Great question. 👍

Just rack the 6 gallon into a 5 gallon. No need add wine.

you should be using campden when racking and oxygen stabilizer ,, no i did not like the idea of having to use other pre made wine to top off, ppl doing this for first time should have a realistic way not like this , also you can get a filtration system to make this go faster but it is better to let it rest and clear on its own as this will mature and improve it

Bad advice.. campden tablets only needed in primary and before Bottling. Wine is perfect for topping off. No crazy expensive filtration system needed bentonite works perfectly.

@@HowToDoneRight before bottling or during racking etc all the same so makes sense to be safe every step ,juts saying that is what i seen from others always doing that, personally i never used sorbate or sulfite although i dont make too many wines and only small batches but it be a shame if your wine spoiled after all that work if it sours during the process before bottling that is ,,anyways happy new year
