How to do a manual pre-infusion with Sage Barista Express. After discovering the technique of using this manual espresso machine, I at least doubled the pleasure of coffee. The machines are identical, sold under the brand name Breville in the USA and Sage in Europe.

I have the Breville Oracle Touch and was wondering if the pre-fusion is the same? And what does pre-fusion do?

Pre-infusion serves to create better extraction by wetting the coffee before pressurized water. I think this period should be kept longer for 54mm portafilters for 18g dose. For this reason, I do a manual pre-infusion for about 10 seconds and stop pressing the button when I see coffee flowing from under the basket.

Here you made 20 seconds manual pre infusion, how long can you manually pre infuse?

You can pre-infuse manually for as long as you want. It will continue as long as you keep your finger pressed on the key. When you take your finger off the button, the pressure increases and you stop the flow by looking at the button once again.

As a guide, most try to get a ratio of 1:2 grams of beans vs grams of espresso at approx 30 seconds .. only a guide.

Some coffee beans may not dissolve sufficiently depending on the ppm value of the water you use when brewing. For a good espresso, we must dissolve the ground beans in water. You can understand this when you drink a sour and astringent glass of espresso. One way to fix it is to extend the pre-brewing time. Before performing pressurized water extraction, we ensure that the coffees are thoroughly soaked in pre-infusion mode.

Bu makinelerin ön infüzyon sürelerinin kısa olduğunu düşünüyorum. Manuel ön infüzyon kontrol modunu her zaman kullanırım. Normalde 4 saniye kadar ön infüzyon yapar, ben 10 saniye civarında yapıyorum. Böylece sepetin altından ilk damlayı görene kadar basınçsız su ile iyice ıslatmış oluyorum. Sonra 20 saniye akış ve ardından durduruyorum. Genelde 18g doz için 36g verimi yakalıyorum. 👌🏻

why does your pre infusion last so long? normally its just 5 seconds or so.

Because I'm doing a manual pre-infusion. This is exactly what this video is about. I think a 5 second pre-infusion is not enough so I do a manual pre-infusion for about 10 seconds.

Doing this - mostly as demonstrated - ensures there is no channeling as all the beans are soaked and gently compressed evenly before the max pressure is applied. Weighing a single dose of beans and emptying into an empty bean hopper is absurd - just experiment with the dosage control and then use the leveller - no need to do that ridiculous needling or even the tamping down - that will automatically be achieved by this method. Non-believer? Well, try both ways and prove it to yourself and firesale your theodolite and microgram scales and needles on eBay. This means a Breville Barista Express can output an excellent coffee every bit as good as machines costing thousands more. There is a reason why the Barista Express outsells all the others. Good coffee is wonderful. Paying the equivalent of a second home mortgage for an "advanced" coffee machine may well be a religious experience but such disciples should not be allowed on a public street without supervision.
