Paul demonstrates how to do a simple twist or a more complicated eight strand plait. See the full technique & ingredients for the eight strand Plait below:
• 500g strong bread flour
• 10g fast action yeast
• 6g fine salt
• 280ml water
• 30ml olive oil
• 8 UNDER 7 OVER 1
• 2 UNDER 3 OVER 8
• 1 OVER 5
• 7 UNDER 6 OVER 1
• 8 OVER 5
• Repeat from 2 UNDER 3 OVER 8

Rightly so, Paul, you are the master of that art, techniques that you make look easy, but that require a lot of attention and mastery, of course, that is achieved with the practice of good teaching, the strands are very beautiful, you kept the rhythm of the 8, you looked very focused but enjoying doing them! Thanks for demonstrating braiding techniques for dough. I think I can cope with the simple braids, but that 8 strand braid is really something else! I love the effect it gives, so I will have to work up the courage to give it a try. Beautiful braids!

Actually great to see clearly how the 3 strand plat is done - I keep messing that up when I make Swedish "pulla" (cardamon bread braid). The 8 strand version is amazing - if I ever try that I'll practice with rope a lot first.

I love all of your recipes and have made quite a few of them through the years... But, it is maddening to me to watch you work with dough on planks. What's with that? Why aren't you using a solid surface? I keep imagining all the flour, dough bits, and various icky stuff falling into those crevices. Nice tutorial, by the way :)

When you number them 1-8 then take 8 under 7 over 1 does 8 become 1 and 7 become 8 or do I have to keep track of the various numbers all the way through? Also I'm sure he's too busy to answer my question ... so here goes nothing
