how do u manage the taxes? do u have to make them annually or monthly and in what language do u need to do them?

Annually in June, in Greek. You need your tax number. Greece recently initiated mobile apps that you can follow and handle things in your tax file within your account yourself online.

Can you cancel the contract at anytime? I mean with like a two month advance notice?

Depends on the terms of the contract and what is written in it.

@@Sunpire What does your contract say, for example, regarding early termination? My contract here in Czechia says I can cancel anytime with a two month advance notice in writing to the landlord.
