Echo the sentiments of other posts. This is by far the simplest approach to re-seasoning 👍. A really good scour with a steel scourer + detergent, a proper rinse with clear water, dry on high heat, and season until smoke clears. Do it regularly and it's not even a chore, and even the oli/smoke reduces and becomes a skill 😂. Thanks.

I just fixed my restaurant wok from this video! I bought a really nice restaurant wok, I burned some food in it used salt to fix it, then encountered the rust issue. Quick note - after removing the rust, dry your wok w a good towel, or strong paper towels, then use high heat to finish drying before applying oil. I use coconut oil to season my wok, worked perfectly. Took me 2 tries because, the fire drying method still left me with flash rust. After drying with paper towels, then the high heat, I applied the coconut oil, and now it is perfectly seasoned. Thank you for your video, too bad you left out that little step. FLASH Rust will occur every time, even on cast iron.

A Tip: Scrub with steel wool. Boil water with a heavy dose of white vinegar. This should bring the colour to a dull grey. Rinse thoroughly and proceed to oiling and seasoning the wok. The avid in vinegar or a dish with plenty of tomatoes eg Indian style Butter Chicken will bring the wok or any iron/carbon steel wok or pan to a clean uniform grey colour. Season subsequently.

Hi Dr Wok! Thanks for sharing these videos, they are really help. So I’m a total newbie to seasoning a wok. I have just purchased a carbon steel one from my local Chinese food shop and followed your video on how to do the first seasoning. I thought I had removed all of the anti rust later when scrubbing for several minutes with a metal scourer and detergent but as I did the first burn it looked like there were areas which still had the anti rust coating. Would you recommend starting again like in this video? Thanks!

Love your channel that I have recently come across. I have tried to rescue my wok as you demonstrate. I have only an induction hob and when I tilt the wok it does not cover enough area of the hob, which turns itself off unless I return the wok to the flat position. Do I have to buy a blow torch?

I got my first wok for christmas, ive used it once and right away the bottom burned, and it rusted just from being soaked. I know my wok is meant to be of good quality since I only saw rave rewiews. Turns out taking care of a wok isn't as simple as the basic frying pans that I've had my whole life. Thank you for the video! I'll try and see if your tips can still save my wok, as it's super pretty and I can't afford a new one. 😭

You gotta rinse ya wok straight away after use, avoid soap if you can, then dry it over the flames again, bone dry. Then paper towel with oil on it and re oil ( lubricate it) all over the inside, then put away! Every time you use it, repeat this process!!!!

Hi. Got my first wok. Induction stove. Attempted the first burn and the wok glowed RED HOT and actually damaged the glass induction top. Maybe too hot?.. how does one determine the right heat/ setting for burning the wok etc?.. Also , is it normal for the cast iron wok to be covered in scratches on purchase, and even more so after cleaning with steel wool? Thanks

Great video and I am going to have to follow these instructions now. I just got my carbon steel wok and the seasoning went well up to the first seasoning where after I added the oil (all I had was olive oil so not sure if that’s the problem) the heated wok had this black goopy stuff on the bottom and it burnt to a hard stain. I scrubbed most out, wiped dry, and heated to blue / yellow color, added oil coating and heated again. Now it’s a brown sticky layer on the bottom of the wok. Guess that’s better than the black goopy and hard stuff but can you advise what I might be doing wrong? I truly am following all the steps except for the type of oil (again not sure if that’s the problem.) Thanks.

You have to use a high-heat oil. Olive oil is a low heat oil, with a minimum ignition temp of something like 250° Don't deep-fry with olive oil. My grandma had a really bad time.

We have an old Typhoon wok that looks remarkably similar to the one you rescued in the video. It's roughly 10 years old and we have been trying mightily to find out whether the non stick coating used by Typhoon 10 years or so back would have contained PFOAs or other dangerous chemicals int he non stick coating. It has some deep scratches and we are more than a bit paranoid. Any help much appreciated! Then we can use your technique to give it a second chance on life ;-)

It isn't a real wok if it has non stick coating then. The wok in this video is a carbon steal wok.

Does this also work on carbon steel woks. I was planning to buy a new one but since seeing this video, I wanted to take a crack at reviving it. Very rusted though, not used for years.

Only do this when when it rusts. After normal cooking, wash with a sponge and hot water, then dry on the stove.

Ok can i ask for a little help i bought a wok from aldi i have used it a handful of times but what ave noticed while cooking with oil and garlic and chilli and ginger paste while cooking like chicken it tends to stick to the pan and then burn should a wok do that and if not how do i go about getting it non stick so i can cook things about burning wok and food and ingredients sticking to pan i thought its because of me washing then drying it after it or its either that or am washing the coating of the wok so after so long my woks lost the coating to non stick but have no idea what i just done tonight was i re washed it wiped it dry got oil in the pan wiped all around the heat up the wok to heat the oil around the pan to keep it coated is this the right way

I don't know what he is using, but I think Siemens did that type of hob at least 10 years ago. Today I cant find any manufacturer.

Hi - I struggled to get the heat evenly and to every area (mainly up the sides and near the handle end) of my wok, when seasoning it with my induction hob. I then cooked and it’s left a bit of a black residue in a couple of places - like something’s burned onto it. I couldn’t fully wash it off using the method in your previous video. It’s also burned some oil onto my induction hob. Can you offer any advice - should I scrub it off the wok and re-season, but take longer, over a slightly reduced heat, maybe? I used heat setting 9, which is the highest without using ‘boost’.

I would scrub it off, that black residue is oil that has pooled and burned onto the wok. You can use a blowtorch, or even your oven to season it if you need a better way to distribute the heat! - Lee

So I used my Brothers wok and was not aware of proper cleaning. It now is rusted and it’s a spun medal do you think I can save it? Should I just get a new wok and caulk it up for experience? The good part is my brother was very forgiving and said it could be saved but I think he was being nice.

Once it has been seasoned it should be okay, just make sure you dry it properly after washing it (putting it back on the heat and letting the water evaporate). If you need to re-season your wok then you will have to oil it again.

The first step he did with high heat drying of the wok, is to open up the steel, and then coat it with a little oil (the oil now is embedded within those steel gaps) , heated again and cool..

Yes, you should. You shouldn’t have this problem IF you buy a high quality STAINLESS STEEL WOK. Yes it cost more, but will last longer. ALSO you really need high heat. Yes I know this is a TV kitchen, but a real restaurant will have MUCH HOTTER HEAT flames. What he has is okay for home use, and professional wok is much larger, some can cook 8 gallons (30+ liters) at a time. I’m my kitchen, I can boil 5 gallons (18.9 liters) in 7 minutes. But, just to let you know there are other restaurants can cook faster.

I remove the handles and do it in the bbq, gets the heat slot higher and you don't have to worry about the smoke.

I seasoned my wok several times now with sunflower oil, but the residue of the oil burns in the wok and a ugly black thing is left in the wok. It goes off with cooking water with citric acid/vinegar in the wok and it get’s very clean. So, my question is how is it possible to season the wok just like you, without having black burnt oil residues left in the wok?

It's not. What he showed is absolutely NOT how you should season a wok.

I would wait with the oil until i heated the wok which forms the layer of iron oxides which combines which oil to give the wok its nonstick surface. You just totally smash and make the oil into black carbon. At least you forgot to mention to add more oil after your so-called seasoning.

You need to scrub the protective anti-rust layer off of the wok, and then season it! - Lee

Can I use vegetable oil to season my wok? I cooked in my wok before I seasoned it I need to do this to fix it. I wouldn't want to throw it away if it can be fixed.

If you scrub wok under water with soap, mine rusts instantly. A drop of water can't touch it.

That's not necessarily a bad sign. In fact it's best to make sure the wok is black all the way through, this means that it has been burnt evenly.

Hi, you're only meant to use a metal scourer if you have rust/need to remove the protective coating on the wok - otherwise, you'll just be removing the seasoning and will need to re-season again! - Lee
