We run a commercial bakery as well online and we have been doing it for 14 years but shes right the costs to start is huge but we own our small business !

I’ve tried a lot of gluten free baked goods and Kind Crumbs has the softest, most delicious “regular tasting” goodies HANDS DOWN🤗 I get them from Sandy’s Donuts every Tuesday! My faves are the cinnamon sugar donuts and the blueberry muffins!

These are wonderful products. Having to be Gluten Free and living in Southwest Michigan. I am glad that they are in my grocery stores by me.

It all depends on how big you want to be and how much money you want to make. I’m OK with making 1000 a month I wouldn’t want to have to run a big business of any sort it just seems so overwhelming.

Rebecca's eyes look heavy and she sounds extremely exhausted. I do not think I have the mental capacity to run a business. Kudos to Rebecaa and her accomplishments!

I agree, I saw that also with how exhausting that looks for her. I am just at the recipe development stage with no money for ingredients and 3 kids and I already am behind daily with my tasks. After watching this I don't think I can physically handle any stress, my adrenals are already shot and running on little sleep with just basic things. The reality of this lifestyle is insane. I don't know if I could pull it off and how could me and my family be happy.

She runs a wholesale business. That's alot more work than running a regular bakery that takes individual orders. She has to produce MASSIVE quantities.

The freezer going out 6 to 7 times a year sounds like a scam. Something's not getting fixed properly on purpose so they keep them calling to rake in the money.

@@nikitadewar3704 The idea that the top 20% of your products account for 80% of sales. They sell 45 different products, so if the 80/20 applied, that would mean that 80% of their revenue comes from 20% of their products. Thus, 9 products account for most of their revenue. Interestingly, when asked about best-selling and favorite products, she named a total of 7, suggesting that the 80/20 rule applies to her business. In other words, she could downsize her product selection by 30-35 items with little to no negative impact on their revenue while greatly reducing costs and increasing efficiency. 45 products is a lot for even the most industrialized business. There's a good argument for cutting down production to those 7 mainstay products, and using another 3 product slots for seasonal, promotional, and developmental products, for a total of 10 products sold. Everything else should be treated as "special order" or 'premium", with a markup that makes it profitable for the company and includes incentives for the employees.

11:07 Can you elaborate please? How is it possible to work 12-14 hours a day (she said earlier) for 5 years without income? I mean your body needs to be exhausted, but how do you pay rent, food etc. ?

Nothing against gluten free at all, but gluten free products tend to use a lot of over processed ingredients that are not good for your body, so to me a lot of gluten free products fix one problem, but they cause some other!

Michigan and the FDA -------------------------------------- To begin with, it's important to know that the FDA's Food Code is merely a collection of recommendations and is not federal law. It is up to individual states to require food service establishments adhere to them, even down to the level of individual jurisdictions. Kind Crumbs is based out of Michigan, so I found the application form to get a license for a food establishment in that state, which can be viewed here: www.michigan.gov/mdard/-/media/Project/Websites/mdard/documents/food-dairy/june_2014_final_temp_food_establishment_license_application_instructions.pdf Page 3, section 4 mentions that "proper hair restraints" are required. It mentions www.michigan.gov/mdard/food-dairy/food-safety which appears to be a proxy for www.foodsafety.gov/ which is run by the FDA. I'm sure if I looked hard enough, I could find laws making a hard, legal connection from Michigan to the FDA's rules, but the fact that they reference them several times is proof enough for me that they do require adherence to the FDA. The FDA Food Code, quoted ------------------------------------------------- This is the 2022 FDA Food Code: www.fda.gov/media/164194/download?attachment 2-402.11 is about hair nets and has two separate entries: From page 64: (A) Except as provided in ¶ (B) of this section, FOOD EMPLOYEES shall wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed FOOD. From page 353: "Consumers are particularly sensitive to food contaminated by hair. Hair can be both a direct and indirect vehicle of contamination. Food employees may contaminate their hands when they touch their hair. A hair restraint keeps dislodged hair from ending up in the food and may deter employees from touching their hair." The key takeaway here is that even though the document uses the phrase "hair restraint" throughout, which could apply just just using a scrunchy to hold hair back, it gets more specific by: a) using the word "cover" and specifying "hair nets" and "hair coverings", which would effectively cover your entire head, b) mentions even the need for covering body hair, and c) mentions that the intention of these regulations is to "keep hair from contacting exposed food", which a scrunchy would not accomplish. Health Inspections, and Conclusion ---------------------- Whether Kind Crumbs falls into the category of legal or not has to do with Health Department inspections. Food service establishments are inspected 1-3 times a year usually and inspectors almost always find certain things here and there that the business is not in compliance with. If the Health Department shut down every business where they found even the smallest of non-compliance, we would have no grocery stores, no fast food places, no bakeries, and no restaurants. Thus, they merely give them a lower score on the inspection. Certain problems fall into different categories; if a critical issue is found, a follow-up inspection will be necessary, whereby the establishment must make corrections by that time. Other lesser issues do not require a second inspection. If the business fails re-inspection, the Health Department can potentially shut the business down (and they most certainly do on a regular basis). Unfortunately, I do not know where a lack of hair restraints falls in all of this, but it would almost certainly not be a critical issue (rats, mold, damp ceilings, rotten meats, etc are criticals). Finally, to answer your question: the only point where it would officially move into "illegal" territory would be if the Health Department shut them down and they defiantly chose to remain in business. I have never heard of the attorney general prosecuting a restaurant and sending someone to jail over misplacing a ladle, not washing hands, or a lack of hair nets.
