Here’s a Christmas dish for our vegan and vegetarian friends that’s not a salad, side or fake meat - Smoked Watermelon Ham. Watch the video and make it at home this Christmas!
Recipe
For the brine you want 2.5% salt and 1.5% brown sugar (compared to the total water volume), then add your 4 x cinnamon, 8 x star anise and 10 x cloves. Brine your watermelon for 48-72 hours.
Smoke the melon at 125°C/250f for the first 3 hours and then turn it up to 170°C/335f for the last 3 hours.
Remove from the smoker and score the top into a diamond pattern before basting with olive oil and rosemary. Enjoy!
