Today we are making and eating smoked watermelon. Lots of requests for this video and quite frankly I was super curious as to what it tasted like. After it was all said and done there are a few things I would have done differently. The flavor was great and this would have been AMAZING had it been a piece of pork but as you will see in the video our thoughts on this interesting culinary invention.

In the Original recipe I believe that Ducks Eatery used Salt, Oregano, Oak Ash, and Coriander but we though we would SPICE IT UP for our version!!!
Recipe for the cure/Brine: Basically, you can do what ever you want!!
Weigh the watermelon multiply the weight of the watermelon by each percentage..
2.5% salt
1.5% Brown Sugar
1% mustard Seed
.45% coriander Seed
.36% all spice
.36% ground ginger
3 bay leaves
5 cloves
4 juniper berries
2 cinnamon sticks
.45% pepper flakes
1 Tablespoon of oak ash (optional)
Peel the watermelon. Make the brine. After the brine cools place the watermelon in the brine for 3 days. Remove from the brine and wash off the spices. Place back in the fridge for 12 hours on a rack to dry. In a smoker with Applewood smoke, smoke on low heat 130-150 for 4 hours then raise the temp to 190 for another 4 hours. Remove from heat, score the top of the watermelon, and prepare watermelon gravy. In a cast iron skillet add your watermelon juice, balsamic vinegar, honey, olive oil, and 1 rosemary branch. Let cook till it starts reducing. Place your watermelon in the skillet and baste your sauce over it. Remove watermelon and add 2 tablespoons of flour to your skillet. Stir well to form a watermelon gravy. It should start to thicken up.

I'd be curious how this would be if you dehydrated it! Dehydrated watermelon is AWESOME if you have never tried it! Really like cotton candy, but strangely refreshing!

ahahaha that poor wee lassie! i have texture aversion troubles with a lot of food, mainly juicy/slimey vegetables. i can tell by lookin at this i'd be the same way she is haha. at least she managed to eat it though! i'd have hurled on contact haha

Your kids are adorable. 😊 But I tell ya, your son's descriptive language + your daughter's facial expressions and choice selections to show to the camera really kill this idea! Hah-hah!! Be sure to share with your kids that there is a correlation between a persons ability to try new foods and their intelligence. Good on them, the kids i know arent as adventurous

Yeah, I'm thinking that the balsamic vinegar would have changed things entirely, and not in a good way. Too many strong flavors conflicting with each other.

What a lovely family. You and your wife should be proud. Your daughter is magnificent and poised, like her mother. Your son seems like you. I see both of them in both of you. Truthfully it was the best part. The curing and smoking brought out it's sweetness and it caramelized just a touch on the outer skin. I would do that one again. The watermelon not so much..

I didn't want the pineapple to steal the show but we ate it and it was incredible. Smoked Pineapple where the outer part started to caramelize just a little bit was really good!!

I truly felt sorry for the poor children they had to eat that garbage. I have watched literally thousands of cooking videos for years and I have never seen anything this horrendous in my life. That perfectly good watermelon was abused to the point where it reduced in size by about 80% and it’s just a bunch of trash now. You seriously need to stay out of the kitchen. Let the children cook for you. There’s no question it would be a lot better. Truly never seen such a horrible treatment of watermelon. - well of course it’s crunchy! Omg! You have cooked all the water out of it. All that’s left are the compressed fibers. Geese. Stay out of the kitchen.
