She was not able to explain clearly. Under atmosphere pressure ( about 14.695 psi, 1.0132bar); the water will boil at 100 degree C or 212 degree F. If the steam pressure at the sealed pressure cooker increased, the steam temperature within the pressure cooker would increase. The higher the steam pressure, the higher would be the steam temperature. I am not sure how the manufacturer design pressure cooker relating to the pressure setting.

In Brazil every single home has pressure cooker. You walk by the homes, and you hear the pressure cooker hissing, shhh, shhhh, shhhh, shhhh. It's so normal thing. And we use it for lunch and for dinner every single day because we like fresh beans, fresh other stuff. No such thing eating left overs. But they say certain food does not belong to pressure cooker such as lentils etc, they say that it can clog the valve. Pressure cooker lasts forever if you are gentle and takes good care.

Mine has 2 pressure settings What are they for please?
