Looks good! I’m a fellow KZfaqr, I would appreciate it if y’all would keep my oldest daughter Jessica and her family in your prayers. They live in Arkansas and a tornado went through their area last Saturday and it destroyed their home. Three huge trees fell on and into their house. It will be a total loss because of structural damage, praise the Lord they were not home. A beam from the ceiling went through her youngest son’s bed. Thank you!

I watched this video & then asked my mom if she used to eat poke salad & she said she did. She said they didn't put onions in their poke salad like you did, but they did put the eggs in. I looked to see if poke salad grew up here in northern Illinois where we live & it does grow here according to Google. I'll have to see if I can find some & cook it for my mom. My mother just turned 91 years old a few days ago. She tells me a lot about growing up in southeastern KY. She grew up outside of Barbourville out in the country on KY 11. They moved into Barbourville when she started high school back in the late 1940s. The last time we were all there was in February 2022 when my uncle died. Man, I need to get down there again & not because I have to go to a funeral!

Mrs. Coyote, my Grandma used to fry up the stem pieces rolled in corn meal, I can't remember if she put any eggs in it...all I do know she couldn't fry enough cause we'd be eatin it as fast as she could fry it !! I wish I could go back to them times !! Thank you Ma'am for the the wonderful trip down memory lane !! I'm from Johnson County Kentucky, and Y'alls accents make me so homesick as I only get to go back home twice a year...Easter and Thanksgiving

I just had some last week, I have had two mess this year and put some in thr freezer. I only boil mine one time and pour water off, and fry in bacon or fat back grease. I have eat it all of my life, I love it.

Awesome recipe Mrs.Coyote! My Grandmother and my Mother cooked it for us when I was younger, somtimes they would fry the stems rolled in cornmeal and I loved them! I've not eaten any for years now last time was in the early 80's before I moved away, if I was to eat any now I'd probably cry remembering them! Thanks for sharing this with us Coyote's!👍

Yes, love poke with eggs in it, thx for sharing I have cooked it bitter before especially if it's older poke...i now use olive oil or avocado oil and no bacon...(health reasons) and I love it still

Polk and wilted lettuce and salt pork and brown beans and cornbread and fried taters and a good fresh garden tomato. No finer meal was ever cooked. Add Mamaw’s banana pudding and apple turnovers. Now I’m hungry.

I’ve never tried poke salad before and have no intention to try it. I’ve picked it for other people though. My mom and dad loved it they would cook the poke and add scrambled eggs and then vinegar

Thanks for this video! I always wanted to know how it was prepared. I've never had it before. (Mom never liked it. - I'll have to ask her if it tasted bitter!😁). Poke weed grows around the edges of our yard, & I hate that we're just cutting down perfectly good food and throwing it away, so maybe I'll give this try!

Never had poke salad, always turnip and collard greens. Corn bread is so good, I miss my grand mothers corn bread. How about some cornbread in a glass with butter milk.
