Hyderabadi style chicken dum biryani, learn with a perfect authentic hyderabadi biryani recipe. This biryani is very famous due to it's unique cooking method where meat is marinated and then layered with rice in a tightly sealed pot and then cooked together on a very slow heat.

I cook the chicken before and dum it with rice for 20 mins.. I am always scared of making this biriyani with uncooked chicken....Amazing recipe..I will try it this week and let you know how it turned out. Thank you!

Rizwana this is great but and there is a but sorry..Firstly leave out the colouring it's not needed..Saffron water that's the key to the flavour..Next there should be slightly brown and crispy rice bits at the bottom of the pan and these are the best..Dum is the only way to do this properly so fantastic..I would also not cook the rice more than 5 mins..This is great so thanks..Indian people Indian food :-)

Hi cool Khan - Is dish ko bananey key liye bohat important hay key aap bohat achhi quality ka basmati sela rice use karain. Chicken ko kum se kum 1 hour key lieye marinate kar ke rakhain or jab rice boil karain to wo sirf 75% cook honey chahiain. Pheley chicken ki layer lagaain and phir rice ooper daalain. Hot rice oopar dalney se and flour ki seal laganey se chicken 45 minute se 1 hour main gal jaati hey and chawal bhi theek rehtey hain. Regular basmati rice use nahi karna kiyon key wo bohat jaldi gal jatey hain and aap ki dish kharab ho jai gi. And agar regular basmati rice use karna hai to chicken main 1 1/2 tbs raw papaya grind kar key mix kar lain marinate karte hooye and only 1/2 hour key liye dum pe rakhain

please make qeema samosas. I remember a small shop in Sadar Karachi used to sell the best small triangular samosas. They never got sogy and stayed crispy the whole day.

yah biryani electric oven main banai thi. Microwave main nahi. aap iss biryani ko gas oven per yah phir regular stove top par Taway par dum dekar bhi banai ja sakti hai

Hi Ibrahim - iski trick yeh hai k aap sella chawal use karain. Chawal 75% gala huwa ho and jub layer lagaain to thori der key liye stove pe rakh ke chicken ka temperature barahain. Doosri important baat hai k degchi ko aatey se achich tarah seal kar dain taakey steam se chicken bilkul gal jaaey

Hi, can you please tell me roughly how long you cook rice, once it comes to a boil, I seem to over cook it

it depends on type and quality of rice. if you are using a good quality basmati rice then make sure you boil in a lot of water , keep checking and take then take them out as soon as they are 75% done. Drain all the water and let cool down for 20 -25 minutes. You can also try using sella basmati rice which is very easy to handle but then you must soak them in water for about 45 minutes to 1 hour and completely boil them.

Hi Andaleeb Akhtar - You can cook the same way on normal stove and for last part of steaming, heatup a heavy tawa and put your biryani pot over it on a very low heat. Try to put another hot tawa on top of the pot cover so it gets heat from top and bottom both. It may take a little bit longer though - about 1hour or so

Hi samina khurram- You can fry onions at home you don't have to use market fried onions. I never use store bought fried onions as they are not good for cooking. Yes! the ratio will be same for goat meat, however you should use raw papaya as a meat tenderizer
