This is a typical weeknight dinner in my house and both my wife and I agree we always just feel better when we eat food like this.

Garlic Basil Chicken Recipe:
2 lbs chicken breast
5-7 cloves of peeled garlic chopped
1/2 tsp kosher salt with the garlic
10 sprigs of fresh thyme stripped (optional)
2 oz fresh basil picked from stem
1 tsp chili flakes
1/3 cup extra virgin olive oil
Fresh lemon and Maldon salt to finish
Go-to Salad Dressing Recipe:
1 tbsp + 1 tsp white wine/champagne vinegar
1 tbsp + 1 tsp lemon juice
1/2 tsp Maldon salt
1 tbsp wholegrain mustard (I used Savorra mustard)
1 1/2 tbsp honey
1/2 cup avocado oil
1/2 cup +2 tbsp EVOO
Garlic Rapini:
1 bunch broccoli rabe
4 quarts of water with 1 Tbsp kosher salt
3-4 tbsp olive oil
4-5 garlic cloves
squeeze of lemon
pinch of Maldon salt

I thought I was the only one that peels their avocados... It helps if you slice a little bit of the skin/flesh off on each side of the avocado halves (similar to what you do with the ends of an onion when slicing. This makes it a LOT easier to peel.

Made this yesterday marinating the chicken overnight. The chicken was amazing, but what really did it for me was the quick vinaigrette dressing. It was sweet, savory, and delicious. It made the whole dish pop!

Sonny, A lot of people have mentioned this before, but I can't help myself. After going back through your early "Cooking with Sonny" videos and comparing those to how you portray yourself today, I have to tell you that watching you evolve your on-screen persona is JUST as entertaining and satisfying as your recipes. I only discovered your channel a month ago or so and I've already made a few of your recipes, and many more are On The List. You'll be pleased to know that Rosemary Salt was the first thing I made (like duh) and I don't need to tell you what I think of it (also duh). I see a lot of people tell you that you're their favorite KZfaq Chef. I don't roll that way. I don't have a favorite movie, I don't have a favorite food. I didn't have a favorite group until I discovered Pentatonix (don't get me started), but my point is that by and large, the term "favorite" is severely overrated . I love lobster. I love filet mignon. I love crème brûlée. I could go on and on. It's pointless for me to try to rate these things because each one is amazing for different reasons, and the same goes for my appreciation of KZfaq chefs. I follow Andrew Rea (Babish), Joshua Weissman, Frank Proto (of Epicurious), Chef John (Food Wishes), and now you. Each of you bring something to the table that is compelling, entertaining, and obviously... delicious. Keep up the good work. You're gaining like 1,000 subscribers a day it seems like. You're gonna get 1 million REALLY SOON! We're all excited for you.

thank you for showing recipes like this. as a former fat kid, videos like this change, save, lives. showing people that you can make delicious, healthy, and even cheap food. not to mention, all these recipes are beyond versatile. for example, im vegetarian turning pescitarian so i could very easily do tofu, or even shrimp.

You can def cook chicken breast high heat in Traeger. The smoke does a great job and also doesn’t dry it out. I love cooking chicken breast on a pellet grill

Loving it, moderation in decadent things requires a balance of healthy delicious like this. This type of meal is my teen aged kids (and wife's) absolute favorite. Except for my homemade marinara and meatballs on any pasta, but that's the former, not the latter healthy. And, non pro tip, my favorite chicken flattener, meat tenderizer is an empty, heavy champagne or sparkling wine bottle. Works like a charm. Off to try to learn a spinning kick!! I commented originally before the end; about wet my pants laughing at that Fridge beatdown. Poor Fridge . . .

I have to say i tried the marinade over the weekend, and it was pretty damn good. I did the garlic basil chicken salad recipe and it was bomb. I was a tad bit short on the basil but it still turned out great. I appreciate the tips

@@crye088 yes that seemed to do the trick, although i didnt have it on super high heat, my stove tends to get a little too hot so i found mid to high heat was the sweet spot. Just hot enough enough to get a nice golden sear on each side. if you do it too hot it might burn the outside before the inside really cooks. Also, even if you don't have a grill pate like in the video, i found that quarter turns help give a good sear on them. i used a cast iron pan. flattening the breasts before hand , then letting it rest after cooking are, imo, key factors to getting a nice evenly cooked/ juicy result.

Add fresh thyme sprigs to the vinaigrette - leave whole so they filter out as you use the dressing. Also, for our non-vegetarian friends, try adding a scoop of bacon fat in lieu of some of the avocado/olive oils. Like 2:2:1 ratio avocado:olive:bacon fat

Love my Traeger for slow smokey cooking but if you want a good sear you need to get a good hot fire going. I like hardwood lump charcoal to get a crust on it and then move it to the traeger to finish.

Watched you for a while, but I think this is the first time I've commented. Would love about a thousand more vids of these kinds of recipes. When I taught myself how to cook, I focused on stuff I loved and would always want to eat--fried chicken, burgers, pot roast, etc.--and so my muscle memory and recipe improv always ends up utilizing the techniques that make delicious but not very healthy food. Stuff like this, where you show how to set yourself up for success but with healthy food, could be a gamechanger for me. You're one of my go-to channels for recipe inspo, btw. Keep up the good work!

I have a pellet smoker and I agree it's not the best for cooking steaks or any kind of grilling really. It will work but it's harder to get the focused high heat you need for certain jobs.

If you put a clean paper towel in the bag of lettuce/homemade salad mix, it will stay fresh longer and won't get slimy.

Something you could do if you live in the city and can't grill or can't afford a grill when you're cooking with a grill pan is use a tiny amount of liquid smoke. You could cut it with some water or some apple juice depending on how strong you want that smokey flavor. I think that would give you that grilled chicken sensation without having the equipment. Though with the flavors emulating in this dish, it's important not to mask them and be over powered. Just do whatever you're comfortable with and what works best for you. Nice video btw 😁👍
