Iʹm tackling the D&D Black Bottom in this series of brewing D&D beers. With this style I decided to try and brew up the almost-extinct style of Piwo Grodziskie. The Polish Champagne, or Polish Smoked Beer.
What would Beers and Ales in the world of Dungeons and Dragons taste like? Iʹm putting this to the test and brewing the entirety of the D&D Ales list with my own rendition of them!
Piwo Grodziskie was a style that went extinct in the 90s before being brought back by Polish Homebrewers. Find out about the history of Piwo Grodziskie as well as how to brew your own version, and what it ends up tasting like!

Recipe for 14L (3 Gallons) - 60 Minute Boil ~ 3% ABV:
* 2kg Oat Smoked Wheat Malt (100%)
* 34g Saaz @ 60 (21.5 IBU)
* Teaspoon of Yeast Nutrient @ 15
* 35g Saaz @ 10 (8 IBU)
* Half a Protafloc @ 5
* Safale K-97 German Ale Yeast
* Mash @ 68C (154F) for 60 minutes
* Boil for 60 minutes.
* Ferment @ 20C for 7 days
OG: 1.029
FG: 1.006
ABV: 3%
IBU: 30

The history of the beer at the beginning is a nice touch....easily becoming one of my favorite brewing series. Adding a lot of beers i wouldn't have even thought to brew to my list...Cheers 🍻

@@NikitaVorontsov You did it very well mate! Like polish! We had originally hop Tomyski, this hop disappeared in 90' when was need for higher alpha acid hops. Now some institut had last 10 seedlings of this hop and PolishHops (polish company harvesting hops) reactivate this hop and now we can buy it in Poland without problem.

@@NikitaVorontsov you can go with hallertau or fuggles/ekg and get good results tbh. Hops are not that important in this beer

Greetings from Poland. We even have a taproom in warsaw that always have a selection of bottled grodziskies (5-6 types) and some on draft(1-4) its called same krafty. Ive drank like 20 different grodziskies. wayermann in poland is seemed as not smokey enough for grodziskie you can add up to 20% of beech smoked grain, without you will get more of subtle aroma as in piwo grodziskie from browar grodziski not any craft brewrery. You should go for higher carbonation though! In 8:16 i think youve nailed the look, good glass also! Thanks for brewing this style. This beer goes amazingly with bbq.

Oh this is awesome!! A very very little-known beer style which I'm glad you took a stab at. I'm glad that you liked this one more than the last smoked beer, and it looks fantastic, love the clarity!

Thanks for another great video. You've peaked my interest in Piwo Grodziskie - I'll have to see if I can find some to try. I'm really enjoying the historical information you provide on beer styles I am less familiar with. And, of course the role plays.

I love your videos. Hey, I don't know if you have heard of a book called "The Home Brewers Guide to Vintage Beer" but it is amazing. Near the end of the book is a recipe for a 1900 Graetzer/Grodziskie. I was considering started a brewing series and going through each beer style in the book.

@@NikitaVorontsov Seems it might be out of print! Color me surprised. Amazon has a kindle copy for 12 bucks. But, it seems even the used is like 50-60 bucks now. Kindle might be the best way to go unfortunately. Its too bad; its one of my favorite recipe books... its spiral bound and has a bunch of history in it. Maybe ebay.

Glad the mini survived the poltergeist attack! Considering wheat is often added to a beer to increase head retention, it’s no wonder this 100% wheat beer had such lovely head and lacing. I tried a grodziskie for the first time last year trying a couple of local breweries takes on the style and really enjoyed them. Plan to try brewing my own this year as well, if it turns out half as well as yours seemed to I’ll be a happy camper. Loving the series so far. Don’t know if you are doing in person or online game sessions, but it would be neat to see you sharing the beers with your group to celebrate a successful session. Cheers!

Hah! Yeah that was really weird, guessing just wind picked up or something! Honestly head was the best ive seen, lacing incredible. Survived all the way. The high carbonation probably helped with that also! Definitely worth trying out, let me know how it turns out! Thanks very much! We do a mixture of online and in-person, but everyone is from all over the south east and so gets tricky to schedule meet ups! That's a fun idea though to video a few sessions with some beers!

Great video! I have a soft spot for almost extinct beers myself, I will try to get this into my brewing schedule. Do you have any information on whether or not Kölsch-style yeasts are historically authentic for polish beers? I brewed something resembling a Silesian Schöps this year and I had no idea which yeast to use, so I guessed that K-97 might work well with that style of beer. If this style of yeast was used more widely in Poland, I got it right by accident :D

Thanks very much! So from my understanding Piwo Grodziskie had a specific yeast native to the style so Kolsch wouldn’t have been used, that being said Polish home brewers had been making up for the lack of proper yeast with K-97 so I’d assume that’s the closest to style they have!
