This beer is all spruced up and rearing to go!
Spruce has such a wonderful almost candy like flavour and aroma that works so incredibly well in a Lager!
The crispness...mixed with the sweet citrus...my oh my is this an incredible beer.

Recipe for 21L (5 Gallons) - 60 Minute Boil ~ 6% ABV:
6.5kg Pilsner Malt - 100%
14g Magnum Hops at 60 (18.6 IBU)
20g Spruce Tips at 60
1 Tsp Yeast Nutrient at 15
60g Spruce Tips at Flameout
1 pkg Lallemand Diamond Lager

Great job! I've been dying to do a Spruce beer for years and eventually will knock one out but like how you made the spruce the star of the show.

im guessing you used black spruce. the tree is edible from the root to the needle tips. the needles can be boiled and eaten to replace greens. if thats anything like making oak or maple wine, its possible to use any part of the 'foliage' at any date, simply adjust the quantity for tannins and harshness, the later in the season the less needs to be used.

Either Black Spruce or Norwegian Spruce, can't remember the correct variety

I'm glad you tried Diamond Lager. There is so much 34/70 worship online, and I actually prefer Diamond, especially under pressure at 68f it's an absolute beast. I'm still waiting for you to don a metal shirt again, I saw that Batushka tee a while back. 🤘

We make Spruce tip syrup for cocktails as we have several on our property. Spruce tip beers are hit an miss for me, I either love them or hate them.

A bit daring to give spruce tips a 60 minute boil, I'm glad it turned out nice! I definitely have to try something similar. By daring I mean that the longer you boil spruce the more it can taste like turpentine, but it can also bring out some fruity flavours. Shorter boils between 15 and 5 minutes gives more tart lemon taste. I've made a spruce beer years ago and 20 grams fresh tips at 10 minutes was too little, next time I'll go for 2X100 grams fresh tips at 10 and 5. Maybe a bit less but mix in red spruce syrup in late primary. I love your channel, keep them coming!

Interesting I didn’t know about the turpentine! I got really really lovely fruitiness from it that was incredible! Damn that sounds amazing wish I had easy access to that many fresh tips!!

Spruce for sahti, last red sahti (20l) i put 500g fresh tips, it gave really nice flavour, but beware mine did not stay in hop spider... got lot pump issues whit tips :)

I have several firs in my backyard and have made a couple lovely beers with their tips. I find they give a bit of a maple like sweetness as well, similar to what you get from fenugreek.

We don't have many natural spruce trees in Australia, definitely want to try this recipe though!

Great timing! I have a bunch of fir trees on my property and was thinking about using some in a Baltic porter….I think I’m going to repitch on top of a s-189 yeast cake…either a simple Pilsner or maybe a amber lager may be nice….im currently drinking a Pilsner with diamond lager and it’s dry but more rounded then 34/70…great yeast and will use again for sure….did you find any added bitterness from the spruce tips?

Oh lovely! That could work quite nicely!! Yeah I agree the Diamond was much drier which I preferred to the 34/70! Personally not really and I’d feel I could even have upped bitterness a touch!

Preferred it to 34/70 by far! Tasted drier which I quite like in a lager
