I can't stop making it for breakfast, lunch or dinner! Quick recipe with 1 potato and 1 egg!
An incredibly delicious recipe for a quick breakfast, lunch or light dinner. I usually used tortilla in this recipe, but I decided to try replacing it with potatoes and eggs and I really liked it. My children are delighted with this dish. They love it with ham and cheddar cheese filling 🤤 and my husband loves it with ham, caramelized onions and gruyer cheese. So the filling can be anything, for any taste. Try this quick and very simple recipe and write to me in the comments how you liked it. Much love 😘
INGREDIENTS:
1 Potato
1 Egg
Black pepper
1/8 tsp Baking powder
1/2 tbsp Ghee or Butter
Feta
Handful of Spinach
1 tsp chilli crunch
Sprinkle some feta on top (optional)

Mrs. Sophie , great, quick recipe & looks delicious , & I was going to suggest spinach & then you added some, lol. I am going to add 2 cloves of minced garlic grated on on a planer grate which will give us the strongest garlic flavor & goes great with feta & spinach & also a buttered English muffin on the side. You can grow potatoes easily, and spinach as well. I love containers, and grocery stores usually give away icing buckets.

I will be trying this meal. I've been taking care of my Mom since 2015 and I was literally running out of things to make for breakfast. It had become the same stuff too often. I know she was tired of it, haha. She's 90 years old and sharp as a tack. She doesn't get around as well ,can't stand for long periods. Because of many issues that I won't go into I'm living at home at 70 and taking care of her is my sole goal. Three times in my life I've been hanging on to life by my fingernails and I couldn't understand why I lived. Now I know, it was this that I was being spared for, being here for my Mom. I've been married twice, it's not like I never left, both wives passed away, first from cancer , second from a heartattack at my Birthday Party. Anyway, this is the kind of dish she would like, thanks.
