People put the sauce on the side because it can seem disrespectful to the chef if you put the sauce on the broth. It seems as if you’re telling them their broth isn’t good enough. Just a fun fact :)

Unless it's like some high end overly expensive place most phở/viet cooks and chefs don't care - they even encourage you to do it and season the broth to your tsste. Anyone who grew up eating phở sometimes put sauce on the side so that they can also dip the meat in it, that's just it. Those sauces are considered both seasonings and dipping sauces.

Major props to both of you for your pho-eating etiquette! Picking up with the spoon with minimal slurping. (Minus the bowl-picking up at the end.) Too many think eating ramen and eating pho is the same...but etiquette is completely different just as the soups are completely different. How do you know? When your Vietnamese mom slaps you on the back of the head while eating your pho too loud. That’s how you know! 🤣😂

That settles it. Tomorrow I have to go eat a large bowl of Pho Dac Biet, my favorite, suppose to snow tomorrow anyway. I'm in the Denver, Colorado area. Two Pho restaurants in Lakewood, Colorado are within walking distance. Where I live, they are Pho Saigon Basil and Pho Asia Belmar. When I don't eat Pho I may eat Com Dac Biet or a different rice plate!! Love it!! I bet there are more than 100 Pho eateries in the Denver area!!
