Taste Atlas have released their Top Dishes for 2023, but I think I might rank them a little differently. So, I’ve cooked the top 10 dishes and invited Babe and Basic Mitch to taste test and rank them with me. Let’s see which dish comes out on top!

@@blairhoughton7918it’s pad kaprao, because kaprao is holy basil. Pad kapow is casual speak. Pad krapao is wrong and is a word that doesn’t make sense

@@blairhoughton7918a Thai person checking in 👋 it’s all about romanization. Different spellings don’t really matter since most people know what you are referring to anyway. Even some Thais can’t spell the word in the so-called authorized way 😂 Don’t sweat it!

Loved this video. Not only does it showcase Chef's skills and versatility, but the team's passion for what they are doing as well. roti canai does usually have a daal curry or something to go with, i dont know why he didnt do it here

the last dish isnt rotty canai or roti chennai its called malabar porotta, its a staple of kerala cuisine.

I live in South Africa and I grow 7 varieties of basil. The plant is hard to get, but the seeds are pretty easy to find. Also basil when they're seedlings are difficult, but once they mature its super forgiving and easy to grow.

@ryanc1592 funnily enough only on my tomatoes, they tend to leave the herbs alone. But I know with some pests they'll always go for the plant they prefer so I plant some tomatoes and other fruiting plants further away from my main garden, like sacrificial lambs basically.

Great video. Roti and naan are really hard to fairly judge because its obvious they are not best on their own, they require a dip/sauce/curry! No matter how good bread is, its never gonna beat a complete meal. Also I love how when babe rates the picanha as low andy says must be the chef’s fault. Such a humble chef andy!

Hello Andy! Nice to see Shashlik making it to the list. A little tip just in case you'll make it in the future: we usually eat it with vegetables and lavash (basically something like tortillas but way thinner) and with adjika or any other sauce you like. My late grandfather (who happens to be Georgian but lived almost all his life in Russia) made the tastiest shashlik I've ever eaten using only mayo and onions for marinade. But surely there are tons of kinds of marinade :) P.S.: I should also add that for us (Russians, Ukrainians, Belarussians etc) Shashlik is more like a nice tradition and the reason to gather with family or friends, basically celebrating late spring/early summer or other important occasion. In my family, when the granddad was alive, he made shashlik every time we visited him&grandma.

Yeap! Roti canai usually serves along with a lot of different dips. Sometime variety of curry and dhal with malaysian nasi lemak style sambal. Thank you for the effort of making this video! Love from Malaysia!

We have similar bread in south India called "porotta". Most people eat it with meat curries.

That's what I was going to say! My understanding is that roti canai is traditionally served with a curry, with even plain roti being referred to by a different name entirely. But you would know better than me :)

looks similar to Malawach (Yemeni dish also popular in Israel), usually served with crushed tomatoes dip and a spicy dip made of green peppers (zhug).

Roti Canai without Dhal curry and malaysian Sambal is not a complete dish. The 3 has to go together. Put the mix in your mouth, life makes sense again. Shout out to Andy, bought your book 👌

@@bishrrrr Roti canai was brought to malaysia from migrant workers from tamil nadu during british colonization. By 1920's roti canai was the main dish served at Indian stalls in both cities and villages throughout the Malayan peninsula.

Amazing work. May I offer a tip when cooking chash? Try mixing with your hands extra minute or two to really smash the meat and especially the onions. You can add twice as much onion. It will do wonders. And when you cook the chash take leftover onions, throw in tin foil with some olive oil and thyme and closit to make a good seal. Throw them in the coals and you will have the most amazing roasted onions, while the meat is cooking. Cheers!

Thanks for the hard work! A Thai person who loves LOVES eating here. I salivated so much seeing all three Thai dishes because I like my dishes spicy and flavorful and because they are something I grew up with. Thanks for this, its brilliant!! I would like to suggest a perhaps more logical assignment of ranking: The first dish you judge automatically becomes #1. The next one then is judged against that, if you think it ranks higher, the second dish takes the #1 spot, if not, it takes #2. Then the third dish is again judged against #1, if you think it ranks higher, it goes into #1,otherwise keep going down until you can slot it in and everything else moves down a spot, and so on.

Awesome episode and awesome cooking as well. One thing I reacted upon is that the meats get unfairly treated in the sense that you have a meat only vs full dishes, even with dumplings they had dipping sauce. Sashlik does normally get eaten with other condiments. For example if döner kebab would been on list, would you have made full döner kebab dish with veggies and sauces perhaps even with bread or meat only - although same its two totally different things. Not saying that the result would been much different, but meat only is hardly a dish.

Andy. Brother, i love this. Love the content, you have made me get back into cooking properly since leaving cheffing 10 years ago at the end of this year. Not only that, but you've made my 5 year old daughter love it too. Shes obsessed, to the point where before bed instead of reading a book she wants to "watch an Andy video". Alot of love down here in Pokbolbin, Hunter Valley mate. However i do have one question from the young lady. Pad krapao is one of my fav things to make at home - I always use finely chopped chicken thigh, and it's crazy good. I'll bet it'd have scored a bit better with the chicken thigh instead of ground beef. One day, I'd like to try it with holy basil, but it's impossible to find. Killer video, Andy. Top tier content.

great video! for the pad krapao i would make some prik nam pla (fish sauce, lime, garlic, chilli and sugar) as condiment. really elevates the dish! also i make it with fresh ground chicken thighs at home

This, also needs some oyster sauce + soy sauce added in at the same tie as the fish sauce. and white pepper to finish. I've never seen beef gaprao in Thailand, its always minced chicken or pork.

I have a dumpling we make that's kind of a spin on soup dumplings and Japanese gyoza. I take our favorite dipping sauce recipe and add some gelatin, then cut the set sauce jelly into small pieces and incorporate it into a traditional pork gyoza filling before steaming or pan frying. It's absolutely incredible - 10/10 recommend!
