Mr. Bulbul. I am 11 years old and I started cooking since 9. Try the sinigang powder Tamarind & Gabi in one. It has a purple strip from the same brand. If you can't find that, use "Sinigang sa Sampalok & Sinigang sa Gabi" together, I also like to sautee white onions and lots of tomatoes first. I boil the pork in a separate pot and skim. I'd put them in the same pot where I sauteed once done skimming, some fish sauce and sometimes I add knorr beef cubes even if I'm using pork meat hahahaha. :) Mashed gabi is optional but amazing. Really the simplest way of doing it.

Actually, the way I learned to cook sinigang was back in the days when I was a kid in the province. The powder sinigang wasn't used then. The traditional way of making it is through crushing actual tamarinds, or using kamias, guava, or green mango.

not all filipino's are difficult to please, many of us are just happy that people outside the philippines love our food. many of our dishes dont have strict ingredients to follow, since the dishes themselves were born from over 500 years of experimentation history (more if we include native dishes from before the spaniards), even adobo (one of the simplest dishes in filipino cuisine) can be made in so many different ways, with different kinds of meat, vinegar, or add vegetables (some traditionalists consider this heresy but potato and carrots are hard to deny), and even stuff like paprika (since the dish 16th century spain mistook adobo for used lots of paprika). filipino traditionalists right now (probably) : burn the heretic! wh40k subreddit right now (probably) : i declare exterminatus!! the emperor protects!! (yes warhammer 40k culture is in the philippines too, even though with all due respect, 99.99% of us cant hope to afford its more... lavish pursuits...)

There’s also sinigang made with bayabas and santol. Also. I agree that pork bones give it more flavor. I cook this from time to time, and now my Korean husband is also in love with it!! He actually likes sinigang more than adobo, which is the most popular filipino dish.

Correct, sinigang out of bones and meat is more flavorful.

I always hear it when other asians try sinigang or adobo, they say that it is somewhat similar to what they ate,but there is actually a difference, adobo and sinigang are very versatile, you can use what ever main ingredient you want to use,you can use fish, pork, chicken or whatever you want

Hey there Mr. BulBul just a quick tip on cooking sinigang for you to have that red soup boil the pork, onions and tomatoes (more tomatoes much better) together until pork is soft then you can add other ingredients. I promise you'll get that filipino taste ;)
