This isn’t my recipe - I just located it in the KZfaq description box and copied and pasted it. Ingredients: 1 lbs whole wheat fusilli or penne, cooked and cooled 1 cup green bell pepper, chopped 1 cup cherry tomatoes, quartered 1 cup cucumbers, diced 1 red onion, diced 1 cup olives, diced ¾ cup vegan feta, crumbled 1½ cup fresh basil and parsley, chopped 1 ½ cups chickpeas, drained and rinsed FOR THE VINAIGRETTE: ⅓ cup red wine vinegar 1 lemon, juice ½ tsp dried oregano ½ tsp sea salt 1 tsp nutritional yeast 2 tbsp dijon mustard ½ tsp black pepper, freshly cracked if possible ⅓ cup extra virgin olive oil Equipment: Pasta pot Large bowl Instructions: Combine the dressing ingredients in a jar and shake or whisk until a dressing is formed. Add all ingredients to a bowl and toss. Enjoy immediately, or store in the fridge for up to 4 days.

With the cost of food, it is possible to buy pasta and store it well. It helps to know we have something to survive. I feel like meat eaters should get to know proteins and substitute. It's just too expensive to eat like we used to😢

In Spain we do this a lot in the summer. We Also do It using chickpeas or lentils instead of pasta. It's a tasty, fresh, easy and light meal

Not vegan, but I do this one very often. Fusilli are the best pasta shape for this! This recipe is a bomb. I also add tuna, quinoa, cherry tomatoes, pickel veggies...you name it. Perfect for Summer

I make a similar salad but also add some marinated artichokes to it. When I want to change it up, instead of pasta I add quinoa or bulgar wheat. I love making it with orzo pasta or the mini bow tie pasta usually used for soups, so all the ingredients are similar in size. And sometimes I swap out the chick peas for green or black lentils. Sometimes adding different fresh herbs to it as well. Parsley works great as do mint, oregano, or thyme or a mixture of herbs. I love fresh basil in there too but I use that fresh on the day otherwise it goes a bit slimy and black. But like you, I am also obsessed with this salad, there is so many flavours and textures (not to mention all the seasonal changes one can make) that it is nearly impossible to get bored. My only problem is that I enjoy it so much it is difficult not to make my portion sizes too big lol. I saw someone recently using a green goddess dressing too (vegan obviously), which I am looking forward to trying in my next pasta salad. But this salad as you have done it is just a perfect flavour combo. Thank you for sharing! 💚🏴󠁧󠁢󠁳󠁣󠁴󠁿

@@henny8883 “they think they’re saving animals but they kill the most” HUH?? fully literally what planet do you live on? How would that even logically work in your brain? That’s just simply not remotely true nor even rationally grounded in reality. Even if somehow more animals were killed in the production of plant foods (which they aren’t, whatsoever) every animal product requires raising a living animal, which itself has been fed hundreds of servings of plant foods and resources over the course of its life just to get you a few steaks. Theres like 10x more crops and plant foods that were used then, compared to if you would’ve just eaten the same amount of calories in plant foods yourself. So even if plant foods somehow “killed more” animals then the meat foods that animals are literally directly killed to become (which is impossible), eating meat still requires far more plants to be farmed than just eating the same amount of calories as that much meat in plants instead, so it would still harm more animals even in this ridiculous hypothetical scenario

I tried it and LOVED it, it tastes EXACTLY like Costco pasta salad. Btw it you try with rotini pasta it won't taste that good, but if you use fusilli pasta it tastes like heaven.
