Human bone marrow might be the best part of a human. We don't have a lot of marbeling in our muscles, and most of our muscles are used for moving us around all the time, which would make them tough like eye-round.

I made a spiral ham for Christmas and discovered, to my joy, that there was perfectly cooked marrow still in that bone. I scooped it out and ate it and it was the best flavoured marrow I've had in my life. I will never forget that taste. Anyways, loved the video, and now I'm drooling....

When I was growing up, my mom would make me pork bone soup sometimes, and my favorite part was always extracting the bone marrow and eating it with my rice. Wonderfully rich and with such a unique flavor.

Can you try making dry aged bone marrow? I had dry aged bone marrow at a restaurant before and it was lovely. Quite strong on its own but it went really nicely with the dry aged steak.

When I was a kid me and dad got to eat all the collards my grandma cooked because my mom wouldn’t cook them and my brother wouldn’t try them. Life was good! Then one day dad finally got my brother to try them and after that there just wasn’t ever enough to go around. You just did the same thing with your bone marrow! 😂 never thought too add to a burger but got to try that! Great video and god’s blessings, happy Fourth of July

You always use garlic powder to season your steak, but I was wondering if it would not be better to use other garlic seasoning like fresh garlic, garlic paste or some kind of garlic compound better ? When doin pickled red onions i recommend cutting the onions the opposite direction than what guga shows here. The texture is way better in the end due to the direction of the onions "fibers".

That's better for a long pickling, though, rather than a quick pickling like Guga did here; with cutting across the grain like he did, the capillary-like structure of the onion, the cross-section of the "fibers" as you call them, will soak up the pickling juices and seasonings fairly quickly. Cutting with the grain gives you long sections of contiguous fibers, so a short pickling won't get fully absorbed into them since it has to draw up through the tips, primarily, rather than the entire surface area of the cut. However, if left for several days, you'll get a much deeper pickled onion flavour, much more rich.

Hi Guga team, I love your experiments, as a suggestion why don't you try aging a steak in a shitake mushroom paste, maybe something with the consistency of what you put in the beef wellington, but only with shitake mushrooms. You can get powderized shitake, or even make your own from dried mushrooms. It would be perfect because you can fine tune the consistency to a perfect paste.

Bone marrow is awesome. Used to be able to buy steaks at the market that included a section of bone that had the marrow. My sister and I used to fight over who got the bone. Nowadays, it's hard to find locally like that. But when I buy a ham steak, I always look for one with as large a bone section as possible.

I've been really curious to see if bone marrow can save the worst cut of beef. Take bottom round (which includes the eye of round), grind it up, and add in bone marrow at a 70/30 ratio. I feel like you could get a pretty damn good burger out of that.

Bottom round is insanely flavourful and is the ideal cut to grind up. All meat is equally tender when ground.

I like to thin slice vidalia onions and coat them with just enough white wine vinegar to coat them, salt and pepper them and I add tarragon and basil both fresh and finely chopped, all to taste and leave it in the fridge for about an hour. Tastes AMAZING with bread and butter pickles.

Ive been following your you tube videos since 2019. Ive tried many of your recipes. Of course my favorite ones are the picanha recipes. I heard of picanha here and there. As well as tried it in Brazilian steak houses in Brazil and here in the US. But I never knew it was picanha until I saw your videos. My 12 year old daughter loves picanha ever since I made the first one in 2021. Her two favorite cuts of meat are picanha which is #1 on her list. And her #2 choice is NY strip. Followed by her #3 choice which are beef back ribs. After seeing the video you made March 19 2019 where you dry aged a beef tenderloin/filet mignon for 35 days. And you used a Umai dry aging bag. I did the same thing in 2019 so I could have it for Thanks Giving. It was a hit. I then dry aged another one so it would be ready for New Years 2019/2020. It was a hit as well. Then between Jan 2020-May 2021 I dry aged around 4 different cuts of meat 12 times. June 2021 I ordered the Steak Ager Pro dry aging meat fridge with numerous accessories and have been dry aging meat in that fridge ever since. I could dry age up 60lbs of meat. Usually I have around 40lbs of meat dry aging in there. Ever since my younger daughter tried dry aged meat. She has been spoiled. This kid knows the difference between dry aged and non dry aged meat LOL. Its been a great investment. And your videos and recipes are amazing. I just found this video. My older 15 year old daughter will be 16 end of September. She asked if she could have her bday party at home and invite between 18-22 people. Many of her friends have tried my cooking ( a lot of your recipes) as well as other recipes that I followed. Those friends told other friends how good it tastes. As well as how I dry age meat as well as about the knives I have. Side note....im not following your recipe where you dry aged a wagyu brisket anymore. I did it once. But will never do it again LOL.. Long story. So I just bought a prime grade 19lb ribeye that I put into the dry ager. I will also buy 3 packs of beef back ribs ( 2 racks per package with a total of 14 ribs per package). Ill smoke those ribs. In addition I will buy some chicken and Ill make my own burgers. Most likely I will be making the burgers around 1/4 lb each. And will have around 20 burgers. Can you let me know how much bone marrow I would need to buy for 20 burgers?

There is actually good evidence to suggest that human hands evolved to hold stones meant for breaking open bones. Bone marrow will actually stay edible long after the meat has gone south. Bone marrow is amazing yo.

I mean, I get Leo's hesitation and calling bone marrow gross. But I use to think a slab of meat called a steak was gross. But now I know how good steak is so now I can look at a raw steak and salivate because I know how good it can be. I think bone marrow is the same way!

Unfortunately it wouldn't, because bone marrow is primarily collagen, not fats, so would not break down and infuse the meat like you want tallow to do. If he didn't use the wagyu, the burgers would probably have turned out to be dry, frankly.

Yeah, the first time you eat prepared bone marrow - when you're basically a city kid and never had anything even remotely like it: it does seem a bit quest for fire. That'll take ya a minute to get used to, because you're got the actual bone split open. Especially kids who grew up on, mostly, fast food or boxed items and such. Then you've got this split open bone with this almost jelly like substance and you're scooping it out of the center of the bone. That'll take a second to orientate, but the flavor is well worth the initial discomfort.

Guga, Absolutely love your videos. Here is a video idea for you if you need one: wet brining meats. Traditionally people do this for turkeys at Thanksgiving but I have tried it on pork chops, sirloin steak, New York’s, Ribeye, and chicken breasts. From my experience it absolutely transforms pork chops (much more tender and juicy), significantly improves sirloin steaks (much more tender), mildly improves ribeye and New York’s, and gives chicken breasts a weird texture that I don’t like. I would love to see a comparison of wet brine versus your classic dry brine Guga steak, possibly even a wet brine eye round versus pineapple for the best tenderizer. My typical wet brine ratio is 1/8 cup salt for 4 cups of water, completely submerge the meat, let sit in the fridge for three days, remove from the brine, lightly pat the meat dry, season with black pepper and garlic powder, then grill per usual. I got a recommendation for an experiment! You should try the seasoning of some type of sausage and do it on a beef burger instead. Chorizo sounds great. However chorizo is made with all the spices and seasonings, do that to the ground beef and make a burger with it! I’m hoping you try this and it turns out great.
