I don't eat normal corn dough banku so my mom deviced a way to cook banku with rice. She blended the rice into flour and then added cassava dough and got a perfect banku for me. I like using rice with less starch since the cassava dough has a lot of starch already.

Oats can be gluten free as well. Oats are naturally free of gluten, but often processed in the same facilities as gluten products. You can buy gluten free oats, if desired.

I made and I am so happy. Usually with fufu there is no taste but with this banku carrot is just slightly sweet and tart. My new favorite. Keep experimenting nanaba we love it

Well done, Nanaaba. I was thinking in order not to overcook the carrot, probably an option would be to start with the rice and when it's about done, add the carrots. The other option is to cook the rice as omutuo 😅 and add the blended carrot..my imaginations only, not tried them yet. This is contemporary cooking and I love it. Never heard of carrots Banku and oatmeal as a binder in banku, though. I am open to new discoveries. Can one use oatmeal as a binder in plantain fufu? All your dishes look deliciouly yummy!! Well done!🤗💐👏👍

Thank you!!!! Yes, you can use oatmeal and plantains tog. Although, the oatmeal, may not be considered as a binder in this case, since it is, in itself, a starchy binder already.

Hi, I just chanced on your channel today and am loving it. I like the carrots bsnku with the brown rice binder. My little suggestion here is to cook the blended rice first till it's cooked and then add the rest of the ingredients. I love my vegetables and hate when it's overcooked and looses the nutrients. Thank you and keep doing what you do best.
