They have a programmable win rate, it determines how often the claws grip with full force, otherwise they grip very weakly and you can't really win anything then. This guy might be using his own machines, there are other youtubers who post similar videos and it was discovered they were just rich kids who had their own arcade in their basement or something.

I remember when i was a kid i went to the clawmachine of a park my family went frequently with 20$. And i returned home with like 15 teddies or more. Obviously this wasn't worth it since those teddies are the kind that probably cost 1$ or less each but the satisfaction of half emptying the machine by myself was good
