It's been a rough day here at AKB studios. An audio issue that I could not hear, and half of my viewers could not hear- drove the other half crazy. I tried replicating it with youtube, in my editing timeline, on my phone, with headphones- bluetooth and wired... and couldn't hear the problem. But a few listeners said it might be a stereo phase cancellation. So I set my timeline main camera track to mono in editing and that seems to have corrected it. I have recorded this way before in several videos and have had no prior complaints. Maybe more people are listening on noise cancelling headphones now and some are thrown for a loop when there's barely audible anomalies in recording? Anyway I think I've had enough people help me with testing this revised audio and I really appreciate it. In the future when I record with a stereo mic into the camera I will avoid this cropping up again by setting it to mono in post. Not that you need to know this. But anyway I appreciate all the time, and even that one person who unsubscribed because I got snippy with him and called him a troll.

hey dude, I'm one of the ones who commented about stereo fuckerey. Its fixed on this one, I'm listening on speakers and checked back and forth against known audio before I commented. I can go back and check other videos if you'd like I don't always watch every one that comes out. It sounded like either one voice channel was out of phase or it was recorded on a "stereo" mic and then got panned hard left and right which made it sound super weird. I think it may have been unnoticeable if I was wearing headphones but I didn't check that. Personal recommendation: check your stereo mic with speakers and then check how it sounds when left and right channels are not hard panned L/R. If its a proper stereo mic then do a few tests of moving around in space and check them on studio monitors? Overall i'd recommend just running mono voice tracks and letting the rest be stereo. Are you still doing stagehand work? I'm one out in nyc and I originally subscribed because I thought you had a similar use case for your tools to mine. Just fucked up a pm3 edge on some red carpet :)

I appreciate all that, but I fully test all my videos play them back on multiple devices before ever uploading them. It was a one off thing- and no it wasn’t a pan in davinci. I’ve used the mic on several videos… and again half the people weren’t experiencing it. It was a one off thing and you’ll see in the comment above that i said I’d be making sure to stick with mono when using this stereo mic. Anyway thanks, no I don’t do stage hand work any more. I did editing, AV, camera up, lighting for neatly 20 years but I’ve moved on to something that pays the bills.

Ahh the frustration and disillusionment, love it! Guys stropping back their 'dull' blades, I suspect their definition of dull is slightly different. 'Yeah, it JUST stopped whittling hair, dull as a doorknob!' The musings on various how-to videos is relatable as well. Feels like some of them either forget what it's like to be a beginner, or omit some crucial bit of info that's extra important for the folk who'll be hitting a roadblock with the process. Seein' AKB fiddling around with that cane machete... lemme just say if you have the space and folks around you won't mind the noise, absolutely invest in an inexpensive belt grinder for your big beater blades. Takes so much tedium out of it, even just using a coarse belt to change the angle of the edge.

Junked bevels learning to sharpen with rods on an angle. Got really good at it over the last 20 years. Having options on sharpening really helps out with different blade types. Recently i started buying knives that have a useful sharpening choil, flats with a defined stop so i can use a knife sharpening system. Its funny how many blade designs take neither of those things into account.

My problem with the clamping systems (i bought a Lansky one years ago) has always been, that i never managed to clamp full flat grinds symmetrically concerning the angle. It always tilted to one side and thus the angles on each side didn't match. And with teh first sabre gind long bladed knife i shaprened with it, i discovered that the grind angle with the clamping systems does change along the blade as long as the blade isn't completely straight but has a curve (like most knives have towards the tip). And the angle change depends and changes with where you clamp the knife. So with longer kitchen knives for example, it becomes important to clamp the knife at the same spot each time. (i clamped that knife closer to the handle, and so while most of the edge had around 20°, at the tip it was more like 12-15°!) And i am way to lazy to measure, record and look that data up next time i have to sharpen a kitchen knife. (during that set up time i have sharpened the knife already with other methods) The next thing i tried was the Spyderco Sharpmaker. And while it does work, i seem to need way longer and more strokes with that stuff than anyone else on the interwebs. Even though i bought the diamond rods additionally to make it faster. (I have used the diamond rods for 50 minutes on a knife and it didn't get sharp. because the rods didn't remove much material. The angle was fine though. And the little paper they put into the package said to not use much force or the glue of the "diamond" particles gives up...). So in the end i went back to what i did since childhood and use freehand sharpening. Just because i am faster with it and need fewer things to prepare. (And i don't think anyone who isn't able to do freehand sharpening is _insert favorite insult here_ because different people have different talents, and have spent different amounts of time to practice different things. I practiced since my childhood, and that's basically almost 30 years of practice. Eventually anyone is able to do it ;-) ) I have the same diamond block you got in the video in the beginning, and i use that when the blade is really dull or has breakouts. Otherwise i have a combined 1k and 3k stone and that is pretty much enough for everything in my use case. (I bought an 8k grit stone once, but that's really unnecessary for my uses unless maybe for optics) Useless fact: i have sharpened an old axe with a metal file (the edge was completely destroyed as someone used it to hack off roots that weren't copmletely cleaned of rocks before hacking, so it was either power tools or a file, and the result with the file was decent and it was way more quiet). But years before that, i have spend 2 afternoons per week for 6 months at the age of 14 learning to use a file and getting marks for the results in engineering school. All that said, i do find the contraptions manufacturer come up with absolutely interesting!

In the day of expensive complex sharpening systems, there’s something to be said for the simplicity of a system like the spyderco sharpmaker or furthermore just a benchstone. Depending on how nitpicky I’m feeling and how expensive the knife is really determines what kind of sharpening I do on a knife. There’s always a point around halfway into sharpening a knife where I have the thought of “why did I even start this”.

Fun video. Damn Alexa, such a saucy minx. Years ago I bought a Wicked Sharp system.(Cooked for years after culinary school) It's such a PITA to use. I bought the attachment to do smaller knives. PITA still. Mainly I'd just pull the stones out and sharpen by hand. I know, I'm an idiot. I should donate the thing to a local charity. Recently I bought the WS Pro Precision system. I haven't taken it out of the box. But I bought a bunch of knives and machetes with the plan to stick to that system... I'll probably cave and just use the lil WS Field Sharpener that I used at work (In produce because cooking jobs suck and I could make more with better benefits working produce at a supermarket.) for years... because I'm an idiot.

So many of the systems you displayed function like the Lansky system I couldn't get to work. Five different grits and the same push or pull process. I spent hours on several knives and failed. I lent it to my son-in-law and he wasn't able to sharpen a knife either. I used the table clamp and the stand plus I replaced that oversized sized red screw which prevented sharpening at a lower angle. I have better luck with the $4 pull through. That Ken Onion belt sander looks like a good possibility. Thanks for the dry wit video and injury to make me feel normal!
@AdvancedKnifeBro
@AdvancedKnifeBro 11 ай бұрын
$4 pull throughs have rarely ever done anything for me. I don’t like them and I’ve had them screw up blades. Belt sanders scare me as I’m afraid I’ll look away for a few seconds and take way too much off… and I’m always worried about them heating up a blade too much. That doesn’t mean my fears are valid… but I’ve taken off too much material with the worksharps when I wasn’t paying attention once. They get them pretty sharp for me. I don’t have the patience to split hairs, but push cut through papers is fine for me
@rustknuckleirongut8107
@rustknuckleirongut8107 2 ай бұрын
As someone who almost always failed on the Lansky system(and then almost circumcised my arm on the one knife I didnt fail on), my problem with the Lansky boiled down to sharpening at the wrong angle and not realizing how long you need to go for with the course stone when you begin at a different angle than the knife was originally. Reprofiling with a standard Lansky set takes an era and a half unless the knife is in a uselessly soft steel. Going from a 20 degree edge to a 17 degree edge takes about a week and a half on a decent modern steel. For me the TSprof clone has been the savior(same quality and half the price), but it took a lot of trial and error getting some sharp edges that looked bad. In the end it is just beautiful with a good selection of diamond stones and strops.

@@AdvancedKnifeBro For me sharpening is mostly a pain in the ass, I like worksharp’s guided freehand systems as they pivot and follow the knife blade. Hi I just sat thru and watched this complete video and I was hoping that your technique with the away from the edge strokes was going to leave you with a laser beam edge. So zit didn’t not even after striping it I’m no pro but I just learned how to get the sickest edges on my Kadett. You have it down partially. Your technique on developing a burr is the same as mine. Instead of doing only away from the edge strokes which I do when I flip the knife to flip the burr. Then do some into the edge strokes 8 of them make sure you are going heal to tip at 1st. Once you have completed 1 cycle with the same stone now do 5 into the blade stroke from tip to heal then 5 heal to tip flip & do the other side. Switch stones and start over until you reach the grit you want to stop at. Good luck let me know how it works for you.

Love the video. I’m confused on one thing with these clamp sharpening systems. Doesn’t the height of the blade change the angle of the sharpener? Like, won’t setting it to 20° for a Case knife, and setting it to 20° for a machete with 2” of blade height give you two completely different angles? Also for longer blades, won’t the angle change the closer to the handle and tip you get vs the center? Or is my brain not functioning correctly? (That’s entirely possible.) Thanks and keep ‘em comin!

Isn’t that why you set your angle for each knife?

@@AdvancedKnifeBro that makes sense. It just seems like, if you set it for 20°, it won’t result in a 20° angle for both of those examples. Because the arm has to reach out further for taller blades. Maybe it’s too small a difference to matter, was just curious.

I use a sharp maker rod on my lawn tools and free hand it. I would probably think a sharpener with a motor would work best on those or a grinder. It’s slow going but you kind of have to feel for the edge. On thinner edges like my Kukris it’s easy but on old thick ass garden shears it sucks

@@AdvancedKnifeBro Quick question I'm new to knife sharpning and I'm wondering if I wanted a 20 degree knife would I do 10 degree per side of 20 degree per side?
@AdvancedKnifeBro
@AdvancedKnifeBro 9 ай бұрын
With the exception of the spyderco sharpmaker all the other systems here show degree per side or the normal way. So 20 degrees is 20 degrees. Spyderco sharpmaker has 2 main settings 30 degrees (or 15 per side) or 40 degrees (or 20 per side). Spyderco sharpmaker is the odd one out, and not the standard way that people talk about sharpening edges

Aside from not knowing the angle of pull-through sharpeners, they don't really sharpen. They tear away at the edge and create a ridiculous burr that might feel sharp to the touch, but that "edge" will be gone in seconds, once the burr gets knocked off and then it'll be dull as hell all over again. I could maybe understand using a pull-through in the field in certain circumstances to quickly give yourself a little bit more refined working edge but only using the fine ceramic. I'd never ever, in any circumstances, want to use the coarse carbide side for anything but to deliberately destroy an edge. For like $30-35ish you can get a WorkSharp Guided Field Sharpener with diamond plates, ceramic honing rods, and even a strop, all with angle guides. Makes it super easy, as long as you understand edge angles.

I didn’t go into depth- but I have been burned by pull throughs. Some don’t sharpen the right parts, others really gouge and scratch the shit out of your blade… they’re really only good for old lawn tools and not any knife you’d use as a carry or in the kitchen.

If you got a horn handle you can scrape off some shavings and put it on a cut that annoys you via bleeding. You can also file down your nails and use that dust, it's also horn. It has sort of a cauterizing effect, I forgot the other word (obviously it doesn't burn you). Just though I put that in here, it helped me sort of closing a fresh cut, and it also helps that annoying burn from your nerve ends laying open to the air (which is what causes those paper cut burns that are very annoying). And I hope my weird German sentences are not too incomprehensive.

@AdvancedKnifeBro

I avoid belt sanders because they take off too much material if you’re not careful. Just not the method I prefer. Worksharp also makes belt sander sharpeners as well- just not super interested, since they generate heat and remove material much more quickly.

Notes: 1. I hate outtakes; however, I hate the over-edited KZfaq bullshit even more. I really enjoyed the honest-to-goodness shitshow of a minimally-edited video. Discourse particles exist for a reason. 2. Hand sharpen woodworking tools. Use Shapton water stones. If you have to flatten the backs of chisels, get the Shapton 120 water stone and let a slurry build up. Only idiots use diamond stones for woodworking tools. 3. Hand sharpening knives is pretty easy. I'm not a pro. I'm not anything. I've failed at pretty much everything that a person can fail at. Literally everything you need to know about hand sharpening knives you can learn watching a few-second montage of Martin from DBK sharpening knives. 95% of sharpening is choosing good stones. See #2 above. That said... 4. I bought a Work Sharp Precision Adjust and it does a good job. It's a colossal pain in the ass. It takes forever. But it's just nice to have a consistent edge without having to worry about it. 5. This will piss some people off, *but the truth about pull-through sharpeners is that they just fucking work.* You got a knife that won't cut warm brie? A pull-through sharpener will make it sharp enough to cut held phone-book paper. It's just a fact. Anybody who can't achieve that are the same type of people who blame their golf clubs for their shitty game. Pull-through sharpeners work. There's no shame in using something that just fucking works. There are probably a lot of people who are put off owning pocket knives because of sharpening. I've test cut pool noodles with a saber sharpened with a single-stage carbide pull-through sharpener. They're easy, they're beginner friendly, and they work.

Even with those pull through sharpeners there are good and bad ones. And i think most knife people despise them because most of the pull through sharpeners remove a lot of material in not the most consistent way and thus the edge looks "not nice". (sometimes even a little like a microserrated edge) Two things knife people aren't fond of. About the freehand sharpening, i think different people have different talents. Some need more practice for freehand sharpening and some need less. But i think anyone can get the hang of it with enough practice.
