In this installment of our Workshop series, we embark on a journey to unlock the secrets of achieving a razor-sharp knife edge. Drawing inspiration from your insightful comments in our previous videos, we've identified three promising techniques and subjected them to a rigorous test to unveil the champion in the art of knife sharpening. All this is done using the Professional Precision Adjust sharpener by Work Sharp.
The Professional Precision Adjust sharpener comes equipped with an impressive array of seven abrasive grits, including 220, 320, 400, 600, 800 diamond, Fine Ceramic, and Leather Strop. However, our quest is to take these sharpening techniques beyond the standard offering.
Here's a preview of the three techniques we've employed:
Microfilms - We've delved into the use of microfilms after utilizing the standard abrasive set provided with the PRO PA, aiming to ascertain whether they offer a significant advantage.
1200 Grit Diamond - The question we explore is whether adding one more grit option can truly make a noticeable difference in the sharpening process.
Water and Ceramic - We've introduced the intriguing concept of enhancing the ceramic experience by adding a touch of water to the mix. Can this simple addition yield more impressive results?
To evaluate the outcomes, we've enlisted the expertise of Josh, who will undertake a battery of tests, including:
Employing a "Bess Tester" to measure the cutting force required, where lower scores are indicative of sharper knives.
A meticulous visual inspection to assess edge quality and identify any imperfections.
Utilizing a digital microscope to scrutinize the edges with exceptional precision.
Concluding the assessment by cutting paper to evaluate the knives' performance and gauge the edge's feel.
Josh will then systematically rank the knives based on their performance, and share his insightful conclusions regarding the efficacy of each sharpening method.
Throughout the video, we'll reveal some surprising discoveries and emphasize the paramount importance of selecting the right abrasives for your knife sharpening needs.

As one commenter said, the Bess official tutorial plainly shows to go slow enough that you can watch the digital display increase at a rate that you can see the numbers change. And it is a real puzzle that you did strop each knife in the same manner. Still I enjoyed the video. It came off as a realistic interchange; not scripted. I will watch for the next one and look for other commenters.

My results on the WorkSharp Professional Precision Adjust knife sharpener have been nothing short of astonishing. It's such an easy and effective sharpener, and delivers a blade edge that's ultra scary sharp with a sparkling mirror finish. My special trick for getting that extra little bit of ultra shine and sharpness is keeping the knife in the vice clamp and finishing off with a leather strop drum attachment on my Dremel at low rpm.

I recently purchased this sharpener just for my kitchen knives and the results have been amazing. I am not experienced in any way and this makes me feel like a pro. I have owned other pull thru and electric sharpeners as well as some stones but could never achieve an impressive edge. I have now sharpened every knife I own including a collection of pocket knives, and my friends kitchen knives. I am addicted but have run out of knives so I am asking other friends if I can sharpen theirs. thank you for making a great product.

I have the same problem where i ran out of knives to sharpen. I borrowed some friends knives and they were happy with the results but still don't seem to care about these amazing edges. I stopped offering my services. Just do my own now. Great system for sure.

Did you look on the microscope at the same place that did the cutting on the forst test?

I use the angle system with dmt mini stones and micro film. Custom 3D printed parts for both DMT stones and 3M lapping film.

This was interesting I guess but I just use the standard PA to get my few knives where I need them. I don’t care about a mirror polish or getting scalpel sharp. I just need my knife to work.

My takeaway is the basic Pro PA system is great. Nothing extra is necessary to get a very sharp knife. If you need a very VERY sharp knife other items might help, but not according to this video. I've had mine for a couple weeks (after 35-ish years using Lanskys) and I love it. I can reprofile and replicate the sharpest I've ever done with a Lansky in a fraction of the time, and a mirror finish is easy

Hey Work Sharp, I have a lot of recurve blades and even Hawkbill blades. I would love to see something that could sharpen those more so than just a ceramic rod. Any chance you guys are working on anything like that?

Hapstone makes a stone holder for this sharpener that can use any stone. 1/2 inch ones work great

I found the plates I bought didn't allow for the extra height of the diamond, ceramic, or strop. I used the angle guide to reset and found it a little less than 1⁰ off. After I reset it, the microfilm did sharpen the edge better. With that small amount of height difference, I wasn't hitting the edge. Was noticeable with a jewelers loop.

I put water on my ceramic hone, and while it does not improve the final result, it stops me having to use an eraser every time you flip sides! Water on the Ceramic Works! Maybe add 2 more Strops with different grits.

You guys need to do this test again, and remove the burr on the 1,200 grit knife. I think if there wasn't a burr it would out preform all of em. I love the videos keep up the amazing work. You could just sharpen the blue again and compare the amber,red,and black.

Water/oil keeps dust out of the air and from coating things, that’s why I use them wet.

For some reason the angle at the top of my sharpening rod on my Pro is not hte same as at the bottom. It's off by .5 degrees.

Hardest part and most important is applying same amount of pressure during each pass.

On the "core" knife, did you use the ceramic followed by stropping, or stropping followed by the ceramic?

Did you guys use the same thickness stone for 1200? It looks like if the stone was a tiny bit thicker and without adjusting it changed angle a bit and made a microbevel. - That would explain increase in sharpness and leaving of a lot of scratches on main bevel.

Great question and good point. The stone was the same thickness and these results were a bit surprising, again we were finding out how they turned out together on camera. If there is one I want to go back and try again its 1200.

Not sure what you saw was a 'burr' persay but micro teeth which I believe would make for a sharper knife.

After watching this video, I am more than satisfied that I went with the Ken Onion blade grinder. It takes an absolute fraction of the time and can Bess test in the low 140's.

Are those Full Size Bugouts or Mini Bugouts? And are those actual Benchmade Orange scales or aftermarket? I'm looking for orange scales just like those. Appreciate your time to help me where I could get them. Ty

Strangely yes... We didn't use the strop because we went straight to micro films. So it appears the strop makes knives sharper than micro films.

I have the precession adjust and am still waiting on someone from your company to get back to me on how to get the replacement for the carrier not sure what it’s called right now but the two little nubs that hold the blade carrier in place have broken

Why no tests with honing oil? Seems like less mess than water and it would possibly trap the abrasive and metal dust to keep the magnetic parts cleaner

We haven't got a lot of comments or suggestions to use honing oil. In general I'd rather use water than oil. Once you use oil you can never go back. You'll always be using oil on that stone. Thanks for the suggestion though, we'll save that one for a future video.

@@jeffreygathreeperforeman8190 -- It's true if you're using traditional whetstones (that you can't go back to water.) As you say, I'm not sure it'd be true with diamonds. I think you could just wash them with dish soap and they'd be fine.

On an old beater set of diamond plates, I used brake cleaner to get the oil off and then washed them with soap and water. No problem using just water afterward. Not the same results with old school stones though.

Your cuts through the BESS test media are WAY too fast, which yield artificially low scores. The recommended cutting time is 4-6 seconds.

Its a shame people payed as much as they did for this system and still were left feeling like they had an incomplete system and needed more. I personally had to buy aftermarket items from niche sellers on etsy like extra plates and microfilms to adhere to the plates to get the edges I desired

We are working on adding some extras. Not sure yet if it will be a kit or if we'll just offer it as individual parts so you can choose what you want to add. Which would you prefer? Single upgrade kit, or different add on's to choose from and build your own kit? What would be most important for you to have?

Just ordered a PRO PA. So many guys, who think they know better, on every video asking for 1200/1500 stones. completely unnecessary.
