*IL CASATIELLO: The authentic recipe of the Neapolitan tradition*

- 500g 00 flour
- 500g manitoba flour
- 10g fresh brewer's yeast
- 25g of salt
- 20g of sugar
- 45g of lard
- 650ml of water
- pepper as needed
for the filling of the casatiello
- 80g cooked ham
- 80g smoked bacon
- 80g spicy provola
- 80g emmental
- 80g mortadella
- 80g pecorino romano
- 2 tablespoons of parmesan
4 eggs to decorate
