I worked at a charcuterie plant and we used the same machine. It injects salt water into pieces of beef that later go in the smoker overnight. It's not chemicals and it's not for increasing the mass of the product, it is done to give the meat uniform taste and prolong shelf life. Edit: Long version for the dummies and conspiracy theorists in the replies that apparently can't read 1. The solution is saline. Salt and water. Nothing else, definitely no carcinogenic chemicals. We used pure NaCl from Tuzla. 2. U use salt to cure meat, as it had been done for thousands of years, injections are just more efficient than putting meat in a bucket of salt. 3. When the meat is cured with salt, it is seasoned (tastes good) and it takes longer to spoil, thus prolonged shelf life (that's a good thing). 4. After the meat passes in the injector, it goes into a smoker. There it is cooked overnight and all the water in the meat is gone, the end product is dry meat like jerky. 5. I was not told this by anyone, I processed over 200kg of beef myself, every day for over a year. We sold the smoked meat to restaurants that used it for charcuterie boards. 6. I am aware that laws differ from one place to another. In Europe it is very strict, many shit practices they do in the US are banned here. There are regular health and safety inspections.

It's not actually that simple, the racks have a square motion which is pretty darn annoying to make. Circling motion would have been easier but less efficient. An actual walking pattern (horizontal on the "move the meat" section and curved on the rest) is fairly easily achievable, more efficient and way cooler (probably) underneath if you're ok with doing some math. Look up "Chebyshev's Lambda linkage" or "Jansen's Linkage" (the second one is more complex, it's what they use on strandbeast designs)

It's Sodium Nitrate, it's used to prevent bacteria growth in meat so it can be on the shelves much longer, in some cases it can react with other chemicals inside your food and body to form cancerogenic nitrosamines

Our local meat butcher charges 3 times more for everything than the local grocery chain. Even with paying for water in the meat, I can still buy 4 pounds of injected meat cheaper than I can buy one pound from the local butcher.

Yall they are injecting it with a food grade functional ingredient to improve the cut. I'm a food scientist. It's the same thing as when you tenderize and marinate a meat to improve its flavor and texture to make it more platable. They do the same thing with chicken and turkeys to better moisten the meat. The functional ingredients are usually, a brine mixture, which you're instructed to do at home to cook a really good piece of meat. EDIT: Thanks guys for top comment! I get it you feel the need to justify your job’s existence but stop lying. This is done to cheap meat. Because it adds water weight. And it always tastes like crap. Also there shouldn’t be such an industry as food science. You create crap mass produced foods that you made as addictive as humanly possible or such bastardisations of real food, that you sell to the poorest people, knowing that you’re at best making them addicted and sick and at worst outright KILLING people. Don’t pretend to have morals now. Just be honest. You’ll do ANYTHING for the bag. Even if it hurts and kills millions. You’re racking up numbers the most evil dictators could never even dream of. Then you have the nerve to be offended when people are inevitably disgusted and repulsed by what you do. Of course they see through the bnllshit!t. Of course they don’t want to feed injected meat to their family, especially their children. Go find a job fixing all the damage you caused. Go get a job fixing the obesity and diabetes epidemic you caused. THEN you can act enlightened and superior. Till them be honest that you create products to destroy lives just for your own financial benefit. You’re no better than the scientists in 1940s camps, no better than the scientists who lobotomised women for profit. I was just doing my job and following orders isn’t an acceptable defence. This is called a pickle injector. It’s main use is pickling beef cuts but can also be used for fish and poultry. You just change the needles and adjust the hyd pressure. Fun fact if you ever been to knotts berry farm in Calif. They sell a chicken dinner and for 2 bucks more you can get extra juicy chicken. It’s extra juicy because it’s injected wit water and binders that hold the water in. 40 years selling processing equip never leaves you.

It's for favor and also for making it keeps longer. Of course it's going to increase the weight as well but that's not the main reason. If you buy ham what you put in your sandwich it's injected with salt other stuff like gormaton/boreham/combipekel etc etc then it's going to spinning in a machine at least 10k round. It's around 18 hours procces. Then they put the meat in a bag and form. Vacuuming it closed it cook it leave it to cool down so the form is gonna stand and voala magic! You can send it to shops.

Can confirm. I worked at "Crapplebee's" back in the day and there is a label on the box which the steaks come frozen in that says, "Contain's up to 18.96% solution." So basically 1/5th of the steak you pay for is automatically water and God knows what else they mix in that "solution". This was also about 15 years ago, so one would imagine it's still the same if not worse.

The bad thing about injected meat is that those injector tips can be loaded with bacteria and you can never make this medium rare you have to cook it all the way through or else you risk getting food poisoning. Always read the label if you plan on making medium rare steak.

Then you can google the farm and youll know if its grass or grain fed and if its pasture raised. You can find out then if the cut is injected. They gave to legally stipulate their practices, but not on the packaging. Youll have to google it

This looks so nice compared to the one i would work with. It was old and many of the needles were bent. Whenever meat got stuck on the line (slabs of pork used in making bacon) i would have to quickly jab my meat hook in to nab it and pull it back. That didnt work most of the time because when the needles got jammed in there the hook wouldnt have enough free space in between the needles to gain a hold on the slab so i would have to grab it with my hands and unwedge it from the needles so that it would go through the line so we could hang it to be frozen so that it could get chooped up. This would all have to be done without turning off the machine by the way. That business was shut down two years after i started work there.

@@logankiraly7515 never happened to anyone while I worked there. Several people get their fingers ripped open because they didn't listen to the warnings they were given when chopping pork chops though. We were always in a semi-damp 40° room all day and people would wear the wool gloves to keep their hands warm. The bandsaw we would use to slice pork chops with had teeth that would pull in people's hands when it caught those wool gloves while slicing. Time after time we would tell people not to wear those wool gloves and some fool would think themselves to be more careful than the last 9 other people who thought the same thing then they'd get hurt and then they'd get drug tested which would result in them getting fired every time (the whole staff smoked weed). That bandsaw would slice you to the bone instantly once it caught you, most people needed stitches and some people lost fingers, it was designed to cut straight through hardbone so a finger was like nothing.

They just decided 1 warning to a bunch of stoners was sufficient?? 😂 After say, the second finger was lost, they couldn't think of any added precautions to stop people from wearing wool gloves?? They lost 9 fingers!!!! Wtf lol good thing they got shyt down before hitting double digits

My grandma once bought home made butter from market. When she defrosted it to salt it, she found out that that they wrapped butter around a solid chunk of ice, and most of what she bought was water.
